I love to slice and bread eggplant like I was going to fry them, but bake them instead.

From there I like to either slice them into sticks and dip them into warm marinara, or keep them round, top them with sauce and cheese, then bake a little more until the cheese melts. Like little eggplant pizzas!

It's also good grilled and tossed into a veggie or pasta salad :)

Have A Craving For Lasagna?
Instead of using noodles, use eggplant slices. You can par boil them for a minute remove and start to layer. Ricotta cheese is low fat, has omega 3's for your brain and heart, calcium and protein. Add green bell pepper, chopped onion, and olives as you layer with some ricotta, parm, and tomato sauce. Yummy!

Eggplant Casserole
Slice 1 medium eggplant into cubes, slice fresh tomatoes thinly, slice 1 onion thinly
2 tsp of pepper, a sprinkle of oregano, thyme and sage
1/4 cup of parm cheese and 6 eggs well beaten
1 pt of oysters (optional)
8 ounces of ground turkey
2 Garlic Buds, minced
Take eggplant cut into cubes...Simmer eggplant, onions, tomatoes garlic, a touch of salt and other hers in a small amount of not overcook. Saute Oysters if using, in a small amt of butter until the edges curl. Add the parm cheese, ground turkey, eggs and oysters to the eggplane mixture and pour into a casserole. Microwave about 35 minutes or until eggplant is soft or until set.

This is my favorite eggplant recipe, and it is low fat. (But be warned, it's super spicy!)

I find eggplant unbearable unless I draw the moisture out first.

1. Slice into rounds and lay on board
2. Salt. And I mean really go to town. Wait 5 minutes then turn the rounds and repeat on the other side
3. Rinse the salt off under running water and firmly pat dry between paper towels
4. Do what you want. I like a little garlic butter.

Slice the eggplant into 1/4 inch rounds, dip in balsamic vinagrette then grill on each side for 5 minutes.
