I'm trying to do the whole foods thing... the less processed, the better, and I found a great recipe for homemade "cream of _____" soup on Pinterest...

Cream of "something" soup recipe

1 cup non-fat dried milk

3/4 cup cornstarch

1/4 cup bouillon (if you have cubes you have to smash them up)
You can use whatever kind you like (ie, beef, veggie)

4 Tablespoons freeze dried minced onions (I used the minced onions from Sam's Club)

1 teaspoon dried basil

1 teaspoon dried thyme (I couldn't find the thyme so I used dried parsley instead)

1 teaspoon pepper

(For the equivalent of one can of condensed cream soup, mix 1/3 cup dry mix with 1 1/4 cup water. Cook until thick)

Crock Chicken

6-8 skinless chicken thighs/breasts
1 can 98% FF cream of mushroom
1 can 98% FF cream of chicken
1 small can mushrooms (optional)
garlic pepper

Combine everything in a crockpt and cook all day on low. The soups makes a really good gravy, you can serve this with mashed taters or over rice. 4 points per serving (not including the potatoes or rice). NOTE: I used frozen chicken in the crock.

Cream Cheese Drumsticks/Breasts

12 Skinless Chicken Drumsticks (or you can use boneless/skinless chicken breasts.
1 (0.6 oz.) Package Zesty Italian Salad Dressing Mix
Salt and Pepper to taste
2 Tablespoons Fat Free Margarine Spread
1 (10 3/4 oz.) Can 98% Fat Free Cream of Chicken Soup
1 (8 oz.) Package Fat Free Cream Cheese, cubed
1/2 Cup Water

Spray crockpot with non-stick cooking spray and place the drumsticks into the bottom. Sprinkle the drumsticks with salt, pepper and Italian Salad Dressing mix. Cover and cook on low for 6 to 7 hours. About an hour before the chicken is done cooking, combine the margarine, cream of chicken soup, cream cheese and water in a medium sauce pan. Cook over medium heat until smooth. Pour the cream cheese mixture over the chicken. Cover and continue cooking for another 45 minutes to 1 hour. When ready to serve, spoon the sauce evenly over each drumstick. This is good served with brown rice for additional points.

Last week I made Chef Meg's Slow Cooker Salsa Chicken and it was phenomenal. It is in the SP Cookbook but you can also find it in the recipe section of SP. I used it for lunches the next day and will probably make it again this week.
