I keep my breakfast pretty simple. An egg, soymilk with cocoa powder and stevia, and a small bowl of Kashi GoLean or oatmeal works fine for me. I work out in the mornings, so it's important for me to have protein and carbs on board.

Breakfast is a foreign concept for me. (Don't get me wrong, I love breakfast foods, but I never eat them in the morning!) I have always skipped it, until recently when my trainer made me start this new program. I have had breakfast every single day for the last 3 weeks, and I really do feel better. I don't usually have a lot of time in the mornings, which is why I used to skip it, so I do quick and easy stuff. I also eat about 95% vegetarian, and protein in the morning is really important.
Some of my faves are:
Cheerios with skim milk and a banana cut up in it. Smoothies with vanilla flavored whey protein powder, skim milk, frozen mixed berries or peaches (or both!) and a whole banana. Or sometimes I just do the banana and add a little ice to make it colder and thicker, that's also delicious. Plain oatmeal with a dash of cinnamon, raisins, and skim milk added after cooking. (2 minutes in microwave) Whole grain bagel with almond butter or low-fat cream cheese.
I want to try baking some muffin cup mini quiches. There are recipes all over Spark Recipes for different flavors. But apparently they freeze well and you can just pop 'em in the microwave. I haven't had time to make them yet.
Make some hard boiled eggs the night before, peel them and leave them in your fridge. Hard boiled and eggs and fruit for Breakfast !!
I love Kashi cereals ! They are full of protein and will keep you satisfied until lunch. My favorite is Kashi Go Lean crunch. You don't have to eat it with milk, I will put some in a sandwich bag and take it with me !!
Here is my favorite muffin recipe . I have been making them for years and my DH and kids have no idea they are fat free and good for them. These freeze well too !!
FAT FREE MUFFINS
1/2 cup applesauce 2 eggs 3/4 cup sugar 2 cups flour 2 tsp baking powder 1/2 tsp salt 2 cups any fruit ( I have used blueberries, strawberries and apples. When using apples, sprinkle a little cinnamon/sugar on top before baking)
Using paper liners in your muffin/cupcake pan.Bake in a 350 degree oven for 30 minutes . Makes one dozen muffins.
These freeze well! I put them in individual plastic sandwich bags and can be warmed up in the microwave for 30 seconds !!

Here are some of mine
2 eggo lowfat nutrigrain waffles spread with 1/2 tbsp of peanut butter each and topped with sugar free maple syrup a boiled egg or a veggie sausage patty a smoothie made with half cup of frozen mixed berries 8oz plain almond milk and stevia
1 eggo lowfat nutrigrain waffle spread with lowfat american cheese and a fried egg and sugar free pancake syrup Grapes Soymilk or Almond milk
1 cup cheerios with 1/2 cup almond milk and tsp honey 1 boiled egg or veggie patty fruit
1 instant oatmeal packet made with 1/2 cup of unsweetned vanilla almond milk stir in 2 tsp mini chocolate chips and 1 tbsp peanut butter boiled egg or veggie patty fruit

I'm new here, and one of my first goals was to eat a healthy breakfast. my typical breakfast is usually a handful of dry cereal and some coffee, or maybe and egg and cheese at dunkin donuts if i have a chance to stop. not exactly healthy! I eat a mostly vegetarian diet, so its harder to get protein in but I'm really trying. sometimes i eat peanut butter on toast but it gets boring fast. for a while i was doing cream cheese, a morningstar veggie patty and an english muffin, but im trying to get away from a lot of the fake soy stuff. i should also add that i am one of those people who sleeps until the LAST POSSIBLE moment and that cooking something on the stove is more of a pipe dream than a reality.... any thoughts?? thanks!!!!
