I know it's too late, but next time you might consider kabobs... I went to eat at a friend's home the other night and she made some chicken kabobs with bell pepper, onion, and mushrooms because she know I was trying to eat healthier.

Awhile back I made this Chicken Enchilada recipe I found on the site. It was quite awhile ago, but I remember it being pretty tasty.
