A stabilizer would be something you'd add to the whipped cream so that it would stay whipped. Freshly whipped cream can start to liquefy after a while, so if you're making something with whipped cream that you don't plan to serve for a while, a stabilizer would solve that problem. Just read a recipe for a berry angel food cake with whipped cream. In it there was a comment about adding a whipped cream stabilizer. I am not much of a baker so I have to ask what is a whipped cream stabilizer and why do you use one? Thanks in advance.
