When do you make your work lunch?

Have you thought of getting a thermos and an insulated lunch bag? Then you could take left overs.

right before work... i eat a lot of salads, and don't want them to get soggy by prepping earlier

I make sure that I have what I need for lunches on Sunday and I prepare what I can in advance. Then the night before I assemble what I can. I have found that having a plan is best, if I didn't pre plan then I end up eating out which gets expensive and is not healthy! I do the same for breakfast, I make muffins or a breakfast casserole on Sunday, divide it out, then a all I have to do is heat.

I pack lunch for my dh to take to work. I usually do it the night before. If something might get soggy I would pack things separately to be assembled.

Look up bento ideas. Usually they are foods eaten at room temperature or cold.

If I'm taking something that might become soggy, I pack it as ingredients and assemble it at work because I don't have time (or interest) in making lunch at 5:00am, so have to do it the night before. It was worth getting an assortment of containers (including little ones for condiments) so I could have a 'crisp' lunch with minimum hassle.

I usually try to pack my lunch in the morning because I hate soggy sandwiches or what I think I want in the evening is not what I think I will eat when I'm getting ready. I don't have easy access to a microwave-too far away and the line is too long. A work friend has eaten the same salad every day for years but I just couldn't face that. And I really can't do much sodium because of my BP. This is the first time I haven't had basically my own microwave and fridge at work and I'm really struggling to find a healthy solution to lunch.
