My request was for non-baking and pancake-y things. Thanks anyway. I guess baking is the only way.

Every weekend I make a batch of low fat, no sugar apple raisin bran muffins. I individually wrap them and pop them in a freezer bag in the freezer and then take one out every night for the next morning's breakfast. 132 calories, 5 grams of fiber, 4 grams of protein and keeps me feeling full some days until lunch.

1.5 cups wheat bran
1 cup nonfat milk
1 tbsp vinegar
2/3 cup Splenda
1 egg
3 tbsp oil
2 tbsp molasses
1 apple, with skin, shredded
1 cup whole wheat flour
1 tsp EACH baking powder and baking soda
dash salt
3/4 cup not packed raisins

MIx milk and vinegar and pour over bran. Allow to soak for at least 5 min. Meanwhile, mix egg, Splenda, oil, molasses and shredded apple until well mixed. Add bran mixture. Fold in dry ingredients just until mixed and then add raisins. Bake in cooking sprayed or paper lined muffin tins at 375 for about 17-19 minutes. Makes 12.

The apple keeps it from being a dry boring bran muffin. :-)

Thanks, Snoopy. I wouldn't have thought of bran yogurt. And thanks for the recipe. It sounds worth trying.

You can sprinkle in on greek yogurt and some honey ...

Here is my recipe for wheat bran quick bread.


1 Egg
1/2 cup Skim Milk
1 cup Orange Juice
1/3 cup Vegetable Oil
1 1/2 cup Flour
1 cup Wheat Bran
3/4 cup Brown Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 cup Chopped Walnuts
1 cup Fruit like Cranberries, Raisins, Apples, Blueberries, Strawberries whatever you like

Preheat oven to 350°F.
Spray a 9 x 5 x 3-inch loaf pan with Pam.

In a large bowl, mix together the egg, milk, orange juice and applesauce.

In a separate bowl, combine flour, bran, sugar, baking powder, baking soda, salt, walnuts and fruit.

Add dry mixture into wet and mix until just combined.

Pour into prepared loaf pan. Bake for 55-60 minutes, or until the bread is firm in the center.

Cool in pan 10 minutes, remove to rack and cool before slicing.

I don't recall why I bought a package of wheat bran. I may have had fantasies of making muffins. Now that the package has resurfaced, I'm wondering if the bran has uses other than baking and pancake types of things?
