I love to roast my veggies with a little spray of olive oil and crushed garlic. Alternatively, grilled just sliced on the griddle or stir fry. Love my veggies !

Depends on the veggie - but typically steamed (al dente,I hate soggy veggies!) or grilled!

Summer is pretty much here so one of my favorite things is to grill them. thickly sliced eggplant, zucchini, roma tomatoes, mushrooms are great. just season with a little salt, pepper and garlic and grill until slightly crispy on edges but not black; flipping at least once. i like to make extras for the week to put on sandwiches.
or i also like to just chop whatever i'm in the mood for: broccoli, cauliflower, asparagus, brussel sprouts (my favorite), peppers, onions, pea pods, green beans, etc and make a foil packet with a little light butter, salt, pepper, garlic and maybe curry spices. makes a great side for your favorite grilled meat. i like to do this with fruit as well. mainly stone fruit but strawberries and bananas work too. sprinkle with a little oatmeal and it's like a crisp!!

I cannot stand sodden veggies, so I like to saute or roast them. I also like to make veggie soup out of just about any combination of veggies I have around the house. Carrots, canned tomatoes, white beans cooked together with some onion and herbs in chicken stock, then pureed, is one of my faves. Pretty much any veg cooked and blended makes a great, hearty soup.

I love the microwave for vegetables. I do corn cobettes, broccoli, carrot rings, green beans quite often with just a couple teaspoons water,and with slow cooker casserole they are great in the gravy..Also,I love stir fried vegies with a tablespoon or two of Balsamic vinegar on them..

Quickly roasted in a 500 degree oven...about 10 minutes in olive oil.

I usually prefer vegetables raw, but I also steam them. I just started roasting asparagus and brussel sprouts...LOVE it.
Another thing I do is throw two cups of fresh spinach in my blender - add a little water, yellow or red bell peppers, fruit (either grapes, watermelon, kiwi), add a little ice, and blend it. Sounds gross, I know, but it's actually really refreshing and helps me get my vegetables into my diet.

I'm a big fan of steaming if I'm doing a bland side to replace a starch, or sauteeing with garlic scape and oyster sauce and sesame seeds if I'm making a stir fry main dish. =)

I love to roast mine in the oven on 400 for about 20 to 25 minutes, it brings out the sweetness in all vegetables. I toss them with olive oil lightly, then add herbs of choice. I love dill, thyme, oregano or basil. I cook extra at dinner and I have them cold for breakfast sometimes.

I like them raw or steamed. Sometimes frozen, especially in the winter when they are expensive fresh. The canned ones are to mushy but I'll eat them if that is what is being served. I put some lemon pepper on them for seasoning instead of butter.

My favorite way to prepare my veggies is a nice saute with a little bit of olive oil. A mix of carrots, red pepper and green beans sauteed on top of salad greens with avocado with a little Italian dressing.

My fave veg is asparagus, because I don't think it needs any flavoring agents to make it taste fabulous, not even salt. I trim the ends, wash it but don't dry it, then wrap it in a couple of sheets of paper towels, and microwave it for 4-5 minutes depending on its thickness. Comes out perfect every time!

no mushy veggies, took until I was an adult and had control over how they were cooked to actually like them.

Wok, steamed, doesn't matter as long as they are perky and not soggy.

depends on the veggie....I like to steam, but you have to know what you are dealing with. Green beans require at least 15 mins more than broccoli.
Mushroomers (NOT steamed), need to sit on a VERY low heat for a longer time than you would think...(they create their own water when they cook down)

i luv 1 pot meals
so I brown my chicken filet or fish filet in 1 Tbsp of olive oil
meanwhile i nuke my veggies for 2-3 minutes (so they are partially cooked thru)
then I remove my chicken or fish the pan
add a third cup of chicken broth...scrape the pan bits into the broth
and throw my partially nuked veggies into the pan I used to brown in...stir it a little
then put the chicken or fish back on top and cover the pan.
meal is done in 5 minutes...full of flavor.

I love broccoli. Traditional steaming in a basket takes way too long and is a pain, so I've grown very fond of microwaving frozen broccoli. Just add a Tbsp of water, cover, nuke for 5 minutes, let it sit for a few, and you've got perfection.

I also love brussels sprouts - Cut in half, drizzle with just a touch of walnut oil. Saute garlic and shallots, add brussels sprouts and cook in 1/2 cup of chicken stock. I use my own but if you buy it, make sure it is low-salt. The chicken stock will reduce and become a glaze. Very delicious and very low-cal/low-fat.

My favorite fresh veggie right now is brussel sprouts ! Buy fresh, cut in half and put face down on cookie sheet, cook in oven 15 minutes at 375. Take out and put in a bowl, melt 1 pad of butter in microwave and drizzle over b.sprouts and a little garlic salt ! YUMMY

I toss them in a little olive oil, add a dash of salt & pepper and roast them in a hot oven (400-450) until they're a little charred, but still crispy. The length depends on the veges, but maybe 5-10 minutes. Asparagus, peppers, onions, mushrooms, cherry tomatoes - almost anything works. YUM.

Sounds like you are cooking them too long! I 'steam' broccoli in the microwave - just wash it then put it on a plate and into the microwave - and it only takes a minute to cook.

I like my veggies:

Roasted and tossed in a little sesame oil, salt, pepper and garlic powder - Potatoes, broccoli, brussel sprouts
Stir fried in yummy stir fry sauce - Anything green! Think broccoli, bok choy, spinach etc

I like vegetables. I'd like to eat more of them but there's one problem. I SUCK at cooking them!! I don't mind eating them raw occasionally but I get tired of that. I try boiling and steaming but they always end up water logged or mushy. If I do cook them right, I can never find the right way to season them. So I'm branching out for some help. How do you like your veggies?
