I had put this together for holiday gifts one year and everyone loved it... just remove the ham to make it vegetarian...

Nine Bean Soup

2 cups Nine Bean Soup Mix (combo of any dried beans, lentils, barley)
1 onion, chopped
6 cups water
16-oz. can tomatoes, chopped
1 pound lean ham, diced
4-oz. green chiles, chopped
1 large carrot, peeled & chopped
1 clove garlic, minced
½ tsp. salt, to taste
¼ tsp. pepper, to taste

Sort and wash bean mix. Place in a 4-quart saucepan. Cover with water and bring to a boil over high heat. Boil 2 minutes, cover pan, remove from heat, and let soak for 1 hour. After soaking, drain off the water using a large strainer. Return beans to the large saucepan; add 6 cups water, ham, carrot, onion, tomatoes (with juice), chilies, garlic, salt and pepper. Cover and bring to a boil. Reduce heat and simmer 1 ½ hours until beans are tender. Add more water if needed. Yield: 8 cups of soup.

Mix some beans with spanish rice. Mix some brown rice and some black beans with salsa. Try rice, beans and italian seasoning. Try using quinoa or couscous as well. I do eat meat, and I've experiments before with beans, salsa and chicken, mayo, pinto beans and ham, etc. I think pesto would be good with some couscous or even ravioli and some beans. Some couscous, feta cheese, beans, olives and some greek seasonings? Pasta, beans, balsalmic dressing, tomatoes and mozz?

This is a very easy recipe I got from another board...
Garlic Black Beans and Brown Rice
Put black beans in the crockpot with a whole bulb of garlic, cook until beans are done, season to taste with cumin and salt, serve over brown rice with salsa( I used my homemade salsa) and sour cream. I

Last one ...but I have more---- just ask....I sure hope this helps you out and if you look around you can convert a lot of ingredients to fit here..I did ...allrecipes is a great place for that...
2 corn tortilla
1/2 cup ff cheese
1T chop jalapeno
1 cup spicy black beans ( drained )
1 T chop cilantro
1/4 teaspoon cumin
1 cup shredded lettace
1/2 cup tomato
1 T chop green onion
2 T. diced avacado
2 T ff sour cream
place tortilla on bake sheet coated with pam bake til crispy ( 400 about 5 min )add spicy black beans ( drained ) to small pot,add cilantro, cumin mashing beans slightly with spoon. Cook over med heat til hot, stir occ..spoon mixture over tortilla tip evenly with lettace and remaining ingredients..serves 2..

1 cup spicy black beans ,undrained
1/4 can or frozen corn
1/4 cup chop zucchini
2 tablespoons red bell
2 T chop green onion
1 T. chopped cilantro
1 teaspoon seeded chop jalapeno
1 teaspoon minced garlic
2 T. white balsamic vinegar
1/2 teaspoon olive oil
1/8 teaspoon pepper
Combine all ingredients in small bowl and stir well. Cover and chill at least 2 hours..2 servings

2 cups spicy black beans
3/4 cup chicken broth
1/2 teaspoon tomato paste
1/8 teaspoon salt
1/8 teaspoon cumin
2 T dry sherry ( opt )
1 teaspoon lemon juice
2 T ff sour cream
Process first 5 ingredients in food processor til smooth.Transfer bean mixture to saucepan.Cook til hot. Stir in sherry and lemon juice to serve tip with ff sour cream....

I have a recipe for you its a black bean recipe that makes 4 recipes for 4 different meals ...
1 lb dry black beans
5 can chicken broth (60.5 oz )
1 cup chop onion
1/2 cup chop green pepper
1/2 teaspoon pepper
1/4 teaspoon each cumin, corriander, red pepper
2 lg garlic cloves minced
bay leaf
2 teaspoons salt
soak beans, combine beans broth and rest of ingredients (except salt ) and bring to boil. Cover and reduce heat and simmer 2 hrs or til beans are tender. Remove and discard bay leaf, stir in salt. Spoon a cup of beans( including juice ) into each of six labeled zip locks..Store in fridge 1 week or freezer 6 mo....Yeild 6 cups..

1/2 teaspoon olive oil
1/2 cup chop tomato
2 tablespoons chop green pepper
2 tablespoons chop onion
1 1/2 teaspoons seeded and chopped jalapeno
1 teaspoon minced garlic
1 cup spicy black beans
1/4 cup plus 2 tablespoons canned chicken broth
2 teaspoons red wine vinegar
1/8 teaspoon salt and dash cumin
1 cup cooked long grain brown rice..
Coat a nonstick skillet with pam add oil. place over medium heat til hot and add tomato and next 4 ingredients. cook 10 minutes mashing beans slightly with back of fork;;To serve spoon mixture over rice...serves 2

Hey all,
I should eat more beans, because I'm vegetarian, but I really don't know a good way to cook them. I'm looking for a recipe with beans, rice, veggies, and some kind of seasoning. I was thinking of making that with like a lowfat pesto, but am not sure.

Or, pretty much any low-fat sauce that can be incorporated in with a grain, a protein, and some veggies... I just need some creative ideas.

I like spicy but just mildly spicy, am really more a fan of tangy flavors like lemon and herbs.
