The starchy veggies are no longer in my diet or definitely not in the quantities they used to be. I don't like the heavy feeling that potatoes leave in my stomach. I don't really care for corn. But I too eat with the rainbow concept. My smoothies though normally green, blue or red, are loaded with lots of colorful fruits and veggies. (green if i don't add blueberries or raspberries)

I, too, like the 'rainbow' concept.

I don't usually gravitate toward potatoes (except sweet), but if I did, they would be in small amounts. Corn, occasionally.

Especially in season, I love all the green veggies I can get, and head for them first, expanding the colour range with reds, oranges and yellows in the form of carrots, peppers, tomatoes. I also use zucchini, snow peas, cucumbers and mushrooms to round out a salad or stir-fry, or however I'm choosing to eat at that time.

I try to eat a rainbow every day! I love looking at my plate and seeing lots of bright colors.

I like to think rainbow - get red, green, yellow, white, orange, blue (in season!) everyday. So that could be strawberries (apples, red peppers), broccoli, (pears, peas), corn (banana, squash), potato (cauliflower), carrot (orange), blueberries.

I find thinking about colour makes me venture beyond the yummy corn and potato.

Foods aren't what we think. Strawberries aren't berries, but cucumber is. Tomatoes aren't vegetables but we treat them as such. Are beans a vegetable or a protein? (They're both).

So you have to ask yourself, what are you trying to achive by upping your "produce intake"? What does that mean to you?

If it means you want to eat more potatoes, go ahead and count potatoes as helping you to achieve that goal. Potatoes certainly are produce!

General guidelines that I've seen indicate that one should aim for 1 serving of starchy veg daily (potato, corn, peas), and 2 servings of non-starchy vegetables as a good baseline. So while all of them are "vegetables", having potato, corn and peas with your steak is not a well rounded balanced meal.

Yes, in a food grouping system---potatoes, sweet potatoes, sweet peas, corn, lima beans, etc---would still fall in a vegetable category. Of course you will want to balance your intake with non-starchy veggies; and keep your total carbohydrate intake within a healthy range. For those on a diabetes eating plan---these foods would also need to be counted as carbohydrate intake for the meal/snack.

I have always wondered if corn and potatoes count towards the daily produce goal? I know that they grow from the ground, but they are also very carbohydrate dense and starchy.
Do you count corn and potatoes as a veggie or a starch? Trying to up my produce intake!
