In Brazil, we typically eat avocado sweet such as in a milk shake, ice-cream or just add some lemon juice and sugar (or sweetener). I love it in salads too. It is so filling.

I eat it on salad, instead of salad dressing. I also use it as a wrap, with a protein, lettuce, and tomato....

Sometimes, I eat it with just tomato slices.

Mix it with some FF greek yogurt and lime juice for a dip or spread. I also put it on toast for breakfast. You can add it to a smoothie too.

Another way I like to eat it is just in a quick summer salad. I do diced red onion, black beans, diced tomato, fresh cilantro, cubed avocado, toss it all together with some fresh squeezed lime juice, salt and pepper, and it's delish.

Talk about fate! I have this page opened up on another tab about the plenty of ways you can use avocados in recipes - and they're pretty inventive with it! I know I'll definitely be using some of these suggestions soon:

Today I put slices of avocado in my turkey sandwich, and it was absolutely delicious. It's one of my favorite foods!

I made a yummy chicken salad this week. Because Avocado turns quickly, I make it just 1 serving at a time.

4oz cubed boneless, skinless chicken breast
1c cherry tomatoes, halved
2T plain greek yogurt
.5 lime juiced
cumin and cayenne pepper to taste
salt and pepper to taste
.5 avocado cubed
.5T dried chives

In a small bowl, combine yogurt, lime juice, seasonings and chives and combine well. Add avocado and combine slightly mashing the avocoado. Stir in chicken and tomatoes.

You can eat it by itself, in a piece of romaine lettuce as a wrap or over a salad, which is my method of choice. It's less than 400 calories and super filling.

mash with a cut up tomato, green onions, garlic, lime juice, a little hot sauce. Serve with veggies or pork rinds.

just last night I took half an avocado, mixed it with salsa to make guacamole and just celery instead of chips. made a great snack.

Lots of great suggestions.

FYI - you can freeze avocado, just in case you manage to get a bunch on sale.
Then you can use them in any of the recipes that call for it to be pureed, rather than eaten fresh.

You can make a Chocolate/Avocado Mousse - and don't laugh, it is great :-)

I love Avocado with chicken or bacon, on a sandwich.
My daughter uses it sometimes with a little garlic, chickpeas and lemon juice or lemon pepper to make a good hummus

I keep it simple...usually just spoon it out of the shell and eat! Love to do a half a one with shrimp cocktail in it too. I also chunk it up and toss on salads, slice onto eng muffin w/cheese for lunch, stuff slices into tacos.

I have found I need to slow down a my usual limit now is 1/4 avocado at a time!
And, they have to be ripe!! (or they are bitter...) So if mine are too firm, they get set out on the counter for a day or two...

By the way GOPINTOS....I'd never heard of freezing them. Thanks for the tip!

Avocadoes are my nemesis...I eat 2-3 a week.

I smush them up, squeeze a little lemon juice on them and some salt and pepper, hot sauce, or cayenne pepper. I either do that on toast or slice up some veggies and dip them in the smushed avocado.

Or I do this:

I stuff them into wraps, dice on top of salads, etc. Or I just slice one up and eat it plain.

SUNSHINE6442 I just read your post, and it was close to snack time, and sounded pretty darn good.

So I took my avocado (I keep them frozen in the freezer. I cut in half, spray with lemon juice, flash freeze, then put them in a freezer bag)

So anyways, I took my avocado, defrosted, thawed out some crab meat, mixed it together with little balsamic, little olive oil, some garlic and onion. I meant a little s&p but forgot. Wrapped it up in some lettuce. I just made a little, incase I didnt like it. OMGosh, I want more!

I make kale-avocado salad (this recipe, except I don't mash the avocado as thoroughly as their instructions suggest, and i use a couple drops of sesame oil instead of the seeds)
I just love this stuff. It's the recipe that got me to like kale.

Make creamy avocado pasta! Since you're on a low-carb diet, you can maybe replace the pasta with "zucchini noodles"--peel zucchini into noodles and steam them.

I just made a baked egg avocado for breakfast! Crack an egg (I used egg whites) into half of an avocado and I topped mine with salsa. Baked at 425 for about 15 mins.

1/2 Avocado with stuffed crabmeat 4 ounces crabmeat with mayo on a bed of lettuce about 6 carbs or Tuna salad Stuffed Avocados

On salads, in tacos, or I make Guacamole Dip...or mash some avocado and top a baked potato

I take a spray of Balsamic vinegar and spray with seasame seeds

I use them as "mayo". They make a great multi-purpose condiment when you mix them with plain Greek yogurt. I use it on wraps and seafood tacos mainly. You can also make dips with them.
