I know that it was probably an autocorrect, Phoenixmyst, but I LOVE that you have "opinions" in your spaghetti sauce!

I find opinions to be the best part of shared meals!

Spaghetti is still my all time favorite. Use veggie/whole wheat pasta, add green peppers, opinions maybe a little broccoli and cauliflower to the sauce with some vegan sausage and I love it

My lazy "go to" dinner is two Quorn naked chick'n cutlets (my husband eats regular chicken) roasted or grilled, a heaping serving of sauteed or steamed veggies, and an easy pasta or rice packet side.

If I'm feeling lazy and uninspired, then I generally throw some chicken breasts or pork loin chops and a pile of whatever veggies are on hand (asparagus, brussels sprouts, broccoli, cauliflower, pearl onions, cubed potatoes, cubed sweet potatoes) in to the oven to roast. I just give the veggies a mist of olive oil before putting them in, but sometimes sprinkle a Tbsp or two of parmesan or balsamic vinegar on before eating.

If I'm slightly more enthusiastic, then my go-to is a stir-fry. I am apparently physically incapable of making a stir-fry of a reasonable size for just two people, so I get the bonus of having the leftovers all ready for the next night (not to mention lunch for the next couple of days).

If I have more time to cook, then I tend to make casseroles, stews, or strata, which end up as dinner for the night and frozen portions for future nights when cooking just isn't going to happen. I also make my own meat/tomato sauce on days when I have hours to have it bubbling on the stove - there are always portions in the freezer that can be heated and put over veggies or pasta if I need something quick and tasty.

Beef and Peppers:
One of each green, red and yellow peppers, cut into strips
One onion cut into rings
1 - 1 1/2 lbs beef fajita strips (can be chicken strips too)
Olive oil

In the summer, almost always a salad. Either a cold pasta salad with lots of veggies and protein or a normal salad with lots of veggies and protein.

In the winter I'll make a casserole with a base of either pasta sauce or salsa and put veggies in there. Stirfrys are also really good (and quick)

When I'm blanking on ideas, I usually go for a good sized simple salad (spinach, tomatoes, avo, and a little dressing) with an appropriate sized protein (usually salmon, chicken, or pork chops depending on what I'm in the mood for and how many calories I have left). Doesn't require much effort for cooking, and fills me up and is tasty.
