Apparently, I've already replied to this topic, but I also like to make these cheesy spinach enchiladas:

For more protein, I add a 15-oz can of rinsed & drained black beans and 1/2 tsp to 1 tsp of chili powder, cumin and garlic powder to the filling.

My go-to veggie meal at the moment is half a kind of chickpea paella, made with store cupboard stuff & grilled Mediterranean veggies (zuccini, peppers, eggplant and onions - I buy a bag of them mixed and pre-chargrilled then cook them in the ove). Mix with a carton of chopped tomatoes, half a can of chickpeas, a teaspoon of smoked paprika and a pinch of chili flakes and heat up. Serve with brown rice (I cheat with the microwave stuff!) and 30g of half-fat cheese on top.

Super healthy and you get protein from the beans, cheese and rice.

If you cook the beans first, yes it would. The beans would be much tastier than those from can. But it will take more time, of course. I ate it with different kind of beans - they all are great. I even tried it with chickpeas, but that did not work. It just did not taste right. However, beans and beetroot seems to be created for each other so they would be combined in this simple but tasty salad.

I do not see much difference between cooked beetroot from Aldi and beetroot I cook at home. The taste is pretty much the same. So, I never cook beetroot myself.

Usually the salad is cooked with garlic (if you like garlic, I strongly suggest using it - it is superb).

In the original recipe they use mayonnaise instead of olive oil, and that is good too.

About proportions. I take beetroot and beans in the proportion 2:1. But if you take it 1:2 that would taste great.

Sweet potato and black bean burritos:

They are a bit time-consuming because you have to bake the sweet potato, but you can double/quadruple the recipe and make a large batch to freeze for leftovers.

Do you think this reciept woudl work with uncooked beans from a bag provided they were cooked first... I have some kidney beans I've wanted to use up for a long time. Also, I am trying new things to make eating better more exciting what flavors come out in beetroot when cooked this way?

My favourite beetroot/beans salad. If you love beetroot, you will like it.
Take a pack of beetroot from Aldi
1 can of beans of your choice (without tomato sauce)

Wash the beans and dry them on the paper towel. Add grated beetroot, salt, olive oil (I usually add 1 teaspoon, but you can skip oil), lemon juice and black pepper.
