The fun thing about sugar is that it doesn't nearly have as much to do with the bakeability (for the lack of a better term) as eggs, flour, and fats (butter, oil, etc). You can totally get away with cutting out as much sugar from most baking recipes as you want without too many adverse affects. The one thing I've found is that sometimes recipes with less sugar won't brown as much while in the oven. I've totally cut half the sugar from the Nestle Toll-house recipe without any adverse affects (equal amounts of brown and white sugar were left out). Use as much sweetener as you want to (dried fruits, applesauce, banana, sugar, maple syrup, etc) and then taste the batter before you pour it out of the bowl to make sure it tastes like you want it too. Quickbreads, muffins, and drop cookies are pretty forgiving.

Try the website Chocolate Covered Katie! I am not vegan (she is) and I LOVE many of her recipies. Although the website is called Chocolate Covered Katie most of her recipies used ingredients like dates to sweeten them instead of sugar. She is a "healthy" vegan baking site. Hope she has what you are looking for.

3 large ripe bananas mashed
1/3 cup of unsweetened applesauce
2 cups of dry oatmeal

1/4 cup of almond milk
1/2 cup of raisins (optional)
1 tsp of vanilla
1 tsp of cinnamon

puree the bananas, then mix everything together. I divide it into 12 muffin cups
bake at 350 for appx 20 mins

104 calories
1.2g of fat
23 carbs
2.3 protein

Even the vegan recipes I can find on the web are sugar-heavy. Some of them even have CUPS of sweeteners like maple syrup. I don't want all that sweet! Does anyone have muffin, quickbread, cookie recipes that are truly healthy--no animal products, no added sweeteners (fruit is sweet enough!) and whole grain? Is there a website or book with recipes like this? Am I the only vegan who doesn't want to be diabetic? LOL
