Have a traditional Mexican breakfast! Make some chilaquiles, or do huevos rancheros (with scrambled egg whites, black beans and salsa) on a baked tortilla.

If you don't want to freeze the tortillas you can cut them into strips, spray very lightly with cooking spray and bake them to make "tortilla chips". These will stay good in a ziplock bag or tupperware container for a few extra days, and you can use them up with salsa, or put them into homemade tortilla soup.

I like breakfast burritos for any meal of the day. A good way to get some protein. Eggs, bacon and add in tomatos and herbs.

One of my favorite treats is a tortilla w/ a bit of butter and some cinnamon and sugar on it, then rolled up. This works especially well if you have a gas stove. You just heat up the tortilla right on the burner on low. You flip it every 10 seconds or so until it's hot on both sides, then you put a little butter on it (I just take the end of the stick and rub it on it, just enough so it's coated, doesn't need to be thick) then sprinkle w/ the cinnamon and sugar. Very tasty and not too bad on the calories.

Mini pizzas for sure!!

I've only made chips with the corn tortillas, so I'm not too sure how well that would work with the flour ones. Maybe you could cut them up and just cook them enough so that they are crispy and spoon the toppings on.

I use them to make a substitute for a jelly donut. I spread about 1/2 tablespoon of low-carb "chocolate nut butter" and then about 1 tablespoon of sugar-free strawberry jelly. I roll it up and eat that when I am craving something sweet and decadent. With low carb, low cal tortillas, chocolate spread, and jelly ... it's only about 150 calories.

Dessert burritos: Spread a thin layer of peanut butter on it, drizzle it with some honey, fold into quarters and enjoy!

They are also a good substitute for naan...make a crock pot dinner with Indian / curry spices, then use the tortillas as flat bread to eat with the meal.

Chicken Fajitas. This is a great recipe that came with my grill. Also works on Foreman grills or skillets if you don't have an outside grill.

I second the idea of heating them up on the griddle and having them with hummus or guacamole. Also, sometimes they just make a nice little change-up for bread... maybe have them with soup or salad, toast with butter and cinnamon/sugar, and heck, can you go wrong with peanut butter (tried it--yum!)? Maybe even Nutella (haven't tried that)!

They freeze. If you will only use 1 at a time I suggest freezing them with a layer of non stick paper between each one.

Other than that, make chips out of them?

Freeze some? I like to make tacos except I use black bean veggie burgers instead of meat. Little bit of cheese, lettuce and salsa...yummy! :)

Put them in the fridge. They will last a long time in there and maybe you won't get sick of eating them before they go bad. ;)

Mini pizzas are a good idea! I also like to make breakfast wraps! A scrambled egg, mexican cheese, peppers, and onions, with a slice of turkey bacon. MMM!

have you ever made mexican lasagna? You bake the tortillas until crisp and use them instead of the noodles you would use in regular lasagna, and layer with taco/burrito filling.

I am pretty sure you can freeze them okay. I know that you can freeze bread, flat bread, pitas, etc.

Can you freeze them so they don't go bad before you can use them? I tend to sale shop and its amazing what you can freeze.

Help me get out of my rut!

I made the mistake last week of going to a discount store and stocking up on tortillas (it was a really good deal!). I thought I bought an appropriate amount since I was planning to make up a big crockpot of taco/burrito filling to eat for a week, but then it turned out kind of nasty and we threw it out and have been doing wraps and such since then...

I still have a whole package left, but I am sick of wraps, and since they're the big flour burrito kind doing a quesadilla is a lot of calories and not very filling. Anyone have any good ideas of how I can use them up over the next day or two? They're going to get stale in the next few days and I don't want to throw them out!
