I like using the crock pot to ! Chicken tenders and a can of cream of chicken soup til tenders done is delicious !

My wife and I both like a microwaved potato with warmed up can of healthy choice soup (usually vegetable or beef vegetable) to top the potato with.

Great ideas here. It was a hot week so one evening we had grilled veggies with chicken. Another evening we had a salad bar, another evening we had bacon, lettuce and tomato sandwiches and the left overs from the salad bar. These were all easy meals to make and kept the kitchen cool. emoticon

Salads that can include chicken or any meat. Also, I started using my crock pot this summer. Before always used only in winter- WHY??? Winter it is nice to have the stove on.crock pot in summer prepares a meal that does not heat up room and/or house. Try it.

I do almost all of my cooking on the grill in the summer! not only does it keep the house cool, but grilling any food is far better then frying etc!!

I use my slowcooker most in the summer. I put it on and do all the prep first thing in the morning and it's done by dionner time. I also find that it doesn't heat up the kitchen

I make a tuna pasta salad (whole grain noodles) with some diced celery, onions and sometimes chopped hard boiled egg for extra protein. Occasionally I will add some diced green bell pepper for extra veggie and extra crunch. I add just enough low fat mayo to bind the ingredients together. I make a bit enough batch to last a couple days in the fridge...

In my family it's my husband(a fellow sparker) and 2 young children. When I bbq, I usually do enough to last 2 or 3 meals when it's hot out. 2 or 3 extra chicken breasts means an easy and delicious salad for the next night. Also, quinoa or couscous are easy to prepare and are great to eat cold - add some chopped chicken breast, fresh chopped veggies and your choice of dressing and you have an awesome, easy and kitchen cooling dinner! emoticon Hi all, a great hot day meal - a big green salad with as many vegies as possible, add tuna or salmon, some grated cheese and a few bacon bits. Top it off with a serving of fresh fruit salad. Very few calories, minimal sodium, minimal fat but really filling.

pasta salad (whole wheat pasta packed with veggies and low fat italian salad dressing)

fruit salad with low fat granola and yogurt

shrimp salad with fresh herb (dill or cilantro) low fat mayo black pepper salt and fresh lemon juice

I love gazpacho ( Cold soup made by pureeing tomatoes.cucumbers, onions, pepper & garlic w/ small amt. of olive oil and Vinegar & tomato juice... & garnish w/ plain yogurt.

any type of salad is good. egg salad, chicken,turkey, etc. a nice romaine salad with these things in it would be good too. maybe add a little fruit on the side emoticon Rose

Take cold cuts, dice into bite size pieces, toss with lettuce and cheese for a Chef Salad.

Cook chicken breast early before it gets too hot or buy them already cooked. Dice, add a little mayo then top with lettuce and salad garnishes for a Chicken Salad.

Pasta salad it good too!
