Au Gratin Potatoes

Servings: 8

Our cheesy potato dish is the perfect crowd pleaser—rich enough for your spouse and kids, yet light enough to keep your waistline slim.


1 spray(s) cooking spray
1 Tbsp butter
1 medium onion(s), thinly sliced
2 Tbsp all-purpose flour
2 cup(s) fat-free skim milk
2 pound(s) uncooked Yukon Gold potato(es), thinly sliced
1 cup(s) low-fat shredded cheddar cheese
1 tsp table salt
1/4 tsp black pepper

• Preheat oven to 375°F. Coat a 2-quart covered baking dish with cooking spray.

• Melt butter in a large pot over medium heat. Add onion and cook, stirring occasionally, until onion begins to brown, about 5 minutes. Stir in flour; add milk slowly, stirring. Add potatoes and stir to mix. Bring to a boil. Stir in 3/4 cup of cheese, salt and pepper.

• Pour mixture into prepared baking dish and level out surface. Bake for 1 hour, uncovered. Cover and bake until potatoes are fork-tender, about 20 minutes more.

• Change oven temperature to broil. Sprinkle remaining cheese over potatoes. Broil 6 inches from the heating element until the cheese is golden brown, about 1 to 2 minutes. Allow to cool for 5 minutes before slicing into 8 pieces.

2-Cheese Potatoes Gratin

Crissy's Note: I use a lowfat cheese and increase it to 8 oz and still shave a pt off the value (3g Fat; 12g Prot; 22g Carb; 1g Fib). This is rich and creamy and perfect with a freezer stash of ham and steamed broccoli.

1 1/2 pounds red potatoes -- cut into 1/4" slices
2 cloves garlic
1/2 teaspoon salt
1/8 teaspoon red pepper
1/4 cup grated Parmesan cheese
1/4 cup flour
2 cups skim milk
5 ounces cheddar cheese -- shredded

Preheat the oven to 350F. Coat a baking dish with cooking spray.

Place potato slices and garlic clove in saucepan and cover with water. Bring to a boil and cook 8 minutes or until just tender. Drain and discard garlic.

Place flour, salt and red pepper in a large saucepan. Gradually whisk in the ilk until blended. Cook over medium heat until thick. Remove from heat; stir in cheese.

Arrange half of the potatoes in baking dish; pour half of sauce over slices of potato. Repeat with remaining potatoes and sauce. Sprinkle with parmesan cheese. Bake for 25 minutes, or until bubbly.

Slow Cooker Ham and Scalloped Potatoes

It’s very easy to put together and it’s delicious! The only substitution I made was to use Badia all-purpose seasoning in place of salt and pepper.


1 1/2 lbs 98% fat-free ham, cut into 8 pieces
8-10 medium sized potatoes, thinly sliced
2 onions, peeled and thinly sliced
1/2 tsp salt
1/4 tsp black pepper, or more according to taste
1 cup fat-free shredded cheddar cheese
10 3/4 oz can 98% fat-free cream of celery soup


1. Layer half of ham, potatoes, and onions in slow cooker.
2. Sprinkle with half the salt and pepper, and then half the shredded cheese.
3. Repeat layers.
4. Spoon undiluted soup over ingredients.
5. Cook on low 8-10 hour or high 4 hours.

Scalloped Potatoes with Ham


3 pounds medium potatoes, thinly sliced
1 medium onion, thinly sliced
1 cup diced cooked ham
1 cup (4 ounces) shredded American cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1 (10 3/4-ounce) can cream of mushroom soup, undiluted
3/4 cup water
1 tablespoon chopped fresh chives (optional)

Layer half each of first 4 ingredients in a 5-quart slow cooker. Sprinkle with salt and pepper; repeat layers with remaining potato, onion, ham, and cheese.

Stir together soup and 3/4 cup water; spoon over potato mixture.

Cook, covered, on LOW 7 to 8 hours. Sprinkle with chives, if desired.

Yield: Makes 6 servings

Scalloped Potatoes with Cheese


1 garlic clove, halved
Butter-flavored cooking spray
6 medium peeled red potatoes, cut into 1/8-inch-thick slices
2 tablespoons margarine, melted
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup (2 ounces) shredded Gruyère cheese
1 cup skim milk

Preheat oven to 425°.
Rub an 11- x 7-inch baking dish with cut sides of garlic halves; discard garlic. Coat dish with cooking spray.

Arrange half of potato slices in dish; drizzle with 1 tablespoon margarine. Sprinkle with 1/4 teaspoon salt and half of pepper; top with 1/4 cup cheese. Repeat layers with remaining ingredients.

Bring milk to a boil over low heat in a small saucepan; pour over potato mixture. Bake, uncovered, at 425° for 40 minutes or until potatoes are tender.

Yield: 7 servings (serving size: 1 cup)

Never Fail Scalloped Potatoes


6 Servings

2 tablespoons butter
3 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups fat-free milk
1/2 cup shredded reduced-fat cheddar cheese
1-3/4 pounds potatoes, peeled and thinly sliced (about 5 medium)
1 medium onion, halved and thinly sliced

In a small nonstick skillet, melt butter. Stir in the flour, salt and
pepper until smooth; gradually add milk. Bring to a boil. Cook and
stir for 2 minutes or until thickened. Remove from the heat; stir in
cheese until blended.

Place half of the potatoes in a 1-1/2-qt. baking dish coated with
cooking spray; layer with half of the onion and cheese sauce. Repeat

minutes longer or until bubbly and potatoes are tender.

Beer-Baked Scalloped Potatoes


Vegetable cooking spray
1 teaspoon vegetable oil
1 1/2 cups vertically sliced onion
1 cup beer
2 pounds medium red potatoes, peeled and cut into 1/8-inch slices
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
2 tablespoons all-purpose flour
1/2 cup skim milk
1/2 cup (2 ounces) grated Swiss cheese

Preheat oven to 350°.
Coat a large skillet with cooking spray; add oil, and place over medium heat until hot. Add onion, and sauté 5 minutes. Add beer; cook 12 minutes or until liquid evaporates, stirring occasionally. Remove onion mixture from heat, and set aside.

Cook potato slices in boiling water for 8 minutes or until crisp-tender; drain. Rinse under cold water, and drain well.

Place one-third of potato slices in an 11 x 7-inch baking dish coated with cooking spray, and sprinkle with half of salt and half of pepper. Spread half of onion mixture over potato slices. Repeat procedure with the remaining potato slices, salt, pepper, and onion mixture, ending with potato slices.

Place flour in a bowl. Gradually add milk, stirring with a wire whisk until blended. Pour milk mixture evenly over potato slices. Cover with aluminum foil, and cut 3 (1-inch) slits in foil. Bake at 350° for 45 minutes. Uncover; sprinkle with cheese, and bake an additional 10 minutes or until cheese melts.

Yield: 6 servings (serving size: 1 cup)

Does anyone have a recipe for some tasty, diet-friendly scalloped potatoes? I do not want any other potato recipes, please....I need SCALLOPED.
