One day will not really make a difference. BUT doing it on a lot of days, or more often than not, will make a difference.

Honestly, I would say don't eat. It'll balance itself out (probably, anyway) in the long run. It's like, if you happen to go too far over one day, you don't go run as hard as you can that night before you sleep... You say 'okay, I will make better choices tomorrow.'

Keep in mind, though, tomorrow that if you are a little bit hungrier, it's okay to eat more! Balance it out! If you normally eat ~1200-150 calories and you feel hungry but you've had 1250 already, eat! Or maybe you had a little bit too much yesterday so you weren't hungry today. I think we (tend to) balance ourselves out naturally if we just listen to what our bodies are saying.

I know I should never go under my minimum 1200 calories a day. However, somehow, today I only ate about 1000 calories. Now I am tired, not hungry and really just want to go to bed. Should I eat a couple spoonfulls of peanut butter to get my calories in or just don't worry about it?? I won't do it on a regular basis, just need to know what's best for today. Thanks!
