But it does lack the pesticide residues. With some foods this matters more than with others.

And to the person who explained that bananas are good for you because they're better than Oreos -- true. Very true. But they're also very sweet, so I limit them (and don't do Oreos at all). It's all relative.

I buy into "HFCS is bad for you," but it's not an inconvenience. I think the only places I have it now are the BBQ sauce, possibly the honey, deliberately bought corn syrup that is probably different from HFCS, and the canned pasta that I keep for weather emergencies.

Actually, I wonder how much of the "adulterated honey" thing is true.

My favorite is probably expiration dates. I've had milk get too interesting for cheese sauce two days before it's sell-by, and I've had milk that was only starting to get interesting three days after. Depending on how dead the meat smells, it might still be fine after a really good cooking, though I don't feed it to anyone even if I'm okay with eating it. I think I've also eaten 6-month old eggs with only a depreciation of enjoyment.

I don't use proper recipes for bread, but completely forgetting half the components doesn't seem to effect it much.

Turns out fine, trust me, it's how I learned how to bake a long, long, time ago.

Unless making sweet doughs, or using a dab of honey/molasses as a flavouring. I've pretty much never used sugar in breads.

But then again, I can't really compare it to the breads you usually bake over there. Never tried them. So it might just be me used to the flavour of them, while someone from a culture where sugar in bread is more pervasive is going to find such bread absolutely horrid.

@obids and Geekling: when you do the bread with no sugar and decreased salt will you please let us know how that goes so we can try it too. I know that one of our local bakeries has a sugar free version of bread.

Pretty much, yes.

I don't know how much salt you add to balance out the sweet. But when you don't add sugar, the salt is mainly for flavour. So you add as much or as little as you want depending on how salty you want the bread.

- The salt does play one other role than just adding flavour. It can help slow the rise down. If you're planning for an overnight cold-fermentation. Personally I double the salt for those ones. But, maybe that's a food myth I've fallen for and the extra salt there does nothing. Who knows. :)

Maybe it's easier to give you a baseline to compare your normal sugar+salt dough against. Would be the easiest way to answer this.
A basic white wheat dough, the kind that becomes crusty buns, regular tinned loaves, pizza crust, baguettes, pitas, etc. Depending on what shape you give it and how you bake it.

The size of batch to give you two loaves:

50 grams fresh yeast (or the equivalent 12-14 gram satchet of dried yeast)
0.5 liters of water
ca. 725 grams (~1.2 liters) of regular wheat flour.
1 teaspoon salt. (2 if making baguettes because I like them more salty.)

That's it. All that goes into the basic version.

Geekling can you elaborate a bit more....been a baker my whole life but have never tried to make bread without the sugar to feed the yeast.....and the salt to balance that action out. So if I baked bread without adding any sugar, would I adjust the salt content down also? By how much?
I think (?) most sourdoughs don't use sugar but I'm not sure; I know only a tiny bit about sourdough baking.

I used to work at mcdonalds and a woman ordered a McGriddle (you know those nasty pancake sandwiches with syrup baked in, with a sausage patty and a liquid egg concoction on it)...

When asked if she wanted cheese on it, her reply was "cheese is bad for you"......

I had to walk away.....

Milk is bad for health. They explain this one with "other adult animal species do not drink milk". That makes wearing clothes bad too :))

"Meat rots in your gut for [3,4,5,whatever] days." I still hear this often as a reason to be vegetarian, but it is just false. Even when I was a veg many years ago, I knew it was false. Here's a good explanation on it

End the sentence right there, or, if you need it to be more complicated, say we're fat because we eat too many calories in proportion to the number we use, especially the non-exercise activities. We IM instead of walking across the office to talk to someone, we drive instead of walking to the corner store, our kids don't have gym class and spend recess playing with their phones instead of running around, and we have access to unlimited supplies of practically-free food.

When soda first came out, a bottle of coke cost about the same amount as a worker earned in an hour at minimum wage. If coke cost $7.50 for a 16-oz bottle today, we'd have a lot fewer obese kids. Nowadays, you can buy a week's worth of fresh fruit and veggies for less than an hour's work, and people complain that healthy food is too expensive!

The myth that bananas are bad because they're loaded with sugar. Pretty sure eating a banana is still waaaay better for me than eating oreos. Plus, they're packed with potassium.

Also, that iceberg lettuce is bad. Yeah, spinach is better, but iceberg is certainly not bad. Especially if you're like me and not a big spinach fan.

I think what's lost in all of the "EAT THIS AND YOU'LL LOOK LIKE A SUPERMODEL!" marketing is balance.

The diet industry is BIG business. Balance doesn't sell. Heck, people can get it for free here and they'd still rather shell out their hard earned moeny for diet book after diet book looking for the silver bullet.

ya...take some valid diet advice and throw it into the american rumor mill and you end up with an extreme version that ignores the point of the original advice....such as a lump "carbs = bad" diet rather than one that just avoids processed carbs and added sugars.

I listen to a few paleo and low carb podcasts (in additon to a few that are totally the opposite) and some of the stuff they say is helpful (like ideas on bread replacements), some of it just keeps me informed on the trend for when a friend brings it up, but other times it's just gross the amount of fatty meats they think is healthy. At least most of them are smart enough to know that if they are going to do that it needs to be grass fed so that the omega 3 content is decent. But at least it's an improvement over the 0 carb all meat approach...yuck.

Carbs are unhealthy.

I used to work with a woman who, while eating a bacon double cheeseburger (she'd discarded the bun), told me that the peach I was eating was unhealthy because fruit has too many carbs.

What can you say to that?

You can't bake bread without adding sugar - sugar is needed to feed the yeast. Or the bread won't rise.

See that one a lot. Simply not true, the yeast is quite happy to digest the mre complex carbohydrates in the flour. What sugar does do is speed up the rise a little. Get the microorganisms all hyperactive like a kindergarten group after a free tasting at the candy factory. Which saves you all of maybe ten minutes on the rise...

That sugar free is better than the item with sugar.

I was comparing the label of some type of snack verses the sugar free snack. And the difference in calories and carbohydrates was minimal. And both had the same amount of fat. So hating diet food, it was a no brainer

I would have said that the myth is the junk food that is labeled "low-fat" is somehow better for you, when the reality is that it often just has more sugar to offset the less fat.
