Can you do hardboiled eggs, crackers, & some veggie sticks & dip like tatziki or ranch?
How about some pre-steamed edamame with a brown rice & veggie salad?

I like to make a pasta salad. Cook your pasta, add whatever veggies you like (tomatoes, cucumber, baby spinach, shredded carrot, bell peppers, broccoli, summer squash, olives, etc), and experiment with dressings. A basic Italian is always good. If you can eat tuna, sometimes I'll throw a little of that in.

Other than that...soups, salads, sandwiches/wraps, veggie burgers...

Use the hummus as a sandwich spread.
chickpea curry
bean burrito
red or black beans and rice
rice balls

I make fratatta's on Sundays. It's packed full of all the veggies and I use egg subs. I also make kidney bean salad, chicken and salsa baked over the weekend. Chicken is good cold. Beats and onion salad ( I add celery seed) Stuffed tomato's. ( I usually stuff mine with chicken or tuna. Stuffed peppers are good room tempature. Hard boiled eggs, peanut butter sandwich which is currently my favorite breakfast with a banana and cup of milk. The possiblilities are endless.

I create larger meals o the weekends when I have time, then I put it in lunch portions and fridge it (or freeze it) until the day I need it.

I made a big pot of chili on a Sunday and portioned it out so that I can quickly grab a container when I head out the door. Kidney beans, veggies, tomato puree and spices and you have a good hearty lunch that packs protein and vegiies

Goat cheese in a wrap with veggies is a good choice. Protein, carbs, and loaded with veggies makes a filling lunch.

I like a marinated bean salad. Think lentils, black bean or white beans marinated w/ lots of lemon juice, garlic and olive oil. parsley or other herbs. you could add olives, capers, thin sliced red onion & colorful sweet peppers. The good thing about these salads is that you can make enough for 2-3 days and they get better as they sit in the fridge.

I also like cold black bean soup. I know it's weird and not for everyone. I swear I saw it in a book or someplace but my husband thinks it's weird. I like it with some lime or avocado.

I work in a religiously affiliated Early Childhood Center where due to religious reasons for not mixing meat and diary we're not allowed to have meat. I'm good with that. I understand the reasoning that since we can't mix meat and dairy, and you can't deny young children milk. However, we are also completely nut free. I am dairy free due to an allergy. So, I've had a lot of pasta and vegetables for lunch the past few months. I've taken hummus with vegetables, bean chili/soups. However I can't always heat things up, and don't like tofu.
Does anyone have any suggestions? I have a nifty little lunch box but I don't like spending much time making lunch because I don't really have a lot of time. I don't mind making a big batch and portioning over the weekend, but need suggestions.
