Mmmm tofu is wonderful! For some people, like my 70-year-old meat-and-potatoes dad, it's never going to be part of a diet. For others, tofu is all too easy to fall in love with. It comes in so many varieties, flavoures, textures and brands. What kind of tofu do you have?

Soft tofu can be used as a thickener in smoothies, shakes, puddings and pies. It can make a good substitute in cream of ____ soups and you can even turn it into a sweet whipped cream. Firm tofu is better for frying but still contains a lot of water. I use extra firm in most of my dishes.

Wrap the tofu is a clean dish town and put it on a plate. Stack a few plates on top of it as weight and leave it to sit for an hour or two. You don't really NEED to do this but it will help some of the moisture drain out and help the tofu absorb flavour.

You can crumble the tofu into a bowl, toss with salt and herbs and add it to a salad. You can crumble the tofu into a frying pan with a bit of butter, dried mustard powder, garlic powder and tumeric for a tofu(eggs) scramble. You can fry it a little before crumbling and adding it to pasta sauce as a meat substitute.

Try marinating the tofu for an hour in soy sauce. Simple! Or you could soak it in grated ginger, semame oil garlic before you cook it. My favourite recipe for tofu is a really simple baked tofu.

Preheat oven to 400. Drain the tofu and slice it into 1/4 inch strips. Dip the tofu in a mixture of hemp seeds, Parmesan, salt and pepper. You could use bread crumbs or flax instead of hemp seeds. If you're vegan you could use nutritional yeast instead of Parmesan. Grill the tofu until a golden crust forms. Pour a bottom layer of pasta sauce in dish and layer the tofu as you would lasagna. You can do this with just the tofu or you could layer it with cottage cheese, thawed-from-frozen spinach or eggplant (also done in the same batter and fried). Top with pasta sauce and some more Parmesan cheese. Cook for 30 minutes or until cheese is golden. If using nutritional yeast then add the yeast after cooking.

Can you tell I like my tofu? I hope this hasn't scared you away from it! It really is a great source of protein and, if you eat it fortified, a good source of calcium, too.

I need a recipe for tofu if anyone knows any and also an idea of how to cook it please. Wanting to try and eat it in a meal or as a meal. I also want to know how to prepare it to.
