I would stay away from the protein bars. I do eat them, but very rarely. Usually when I am on the go and need something portable.
There are a lot healthier ways to get in your protein. And possibly more cost effective, too. Like tofu. Just marinate the tofu so that it doesn't taste so plain. Eggs or egg whites. Shell fish other fish and chicken unless you are cutting out all meat. And even some veggies like Broccoli, kale and spinach are good sources of healthy protein.
Why would you use a shake or a bar? Use a different protein source. White mean, eggs, fish, protein rich veggies, tofu, beans, quinoa, etc. A bar and a salad does not sound like a healthy meal, or a satisfying one, to me.

Personally, I would stay away from eating lots of processed soy, so if the shakes and bars have lots of it, I think the meat would be better. Maybe you can make a shake with yogurt or milk, and jazz it up with nut butters.

It all depends on what your calorie intake is; would a salad & protein bar push you over the top end of your intake range? Also, there's lots of foods besides red meat that have protein, like chicken, almonds, etc.

I haven't ate red meat in about 10 years but I still eat seafood and substitute tuna for bunches of things.
Hey, protein can be found in lots of veggies like spinach and kale. No need to eat a protein bar or shake which are filled with things that you can't pronounce. (unless you make them at home) I won't touch dairy which is a personal preference, but why not a small cup of yogurt or make yourself an egg of some kind. (don't do tofu or soy--loads of carcinogens in the manmade stuff)
I find the store bought bars make me hungry one hour or so after eating them they I crave sugar which hasn't really been part of my diet for the last year.
I have found myself disliking red meat for some time now. Its especially hard when that is the main source of protein for my family. I want to know if i can substitute like protein bars and shakes instead of red meat. So my meal would be like a salad and a protein bar or is should the protein bar/shake be the whole meal?
