Hmm, I think I may just end up adding the fruits and nuts to half, and freeze whatever is left for my lunches. That way, I get to enjoy the recipe as-is, and hubby can have it altered. Not that he would complain, but he's such a sport with my experiments. :D Thanks for all the tips! I'm excited to give this a try this week. Oh - just had a thought. Instead of a baked potato, what if I did roasted squash? Something winter-y we both love. I have such a hard time pairing sides and main dishes, but I'm getting there!!

I've never made it, but I think it would freeze fine. Cool it off in the fridge first, then put in the freezer.
I don't think it would make a HUGE difference to not have the dried fruit in there, but it might be lacking a bit of sweetness... you could just take a taste test after it's cooked for the 6 hours and see if there's something missing. Might just need to add a bit of sugar. You could also just add some to your portion after you dish it out.
For sides, a salad would work, or brown rice. Even a baked potato would work.
I want to make this recipe, but I have a couple of questions first. Will it freeze ok? Hubby hates nuts and dried fruit in his food, would it change dramatically if I just skip these? Lastly, hubby also hates couscous, so what else could I serve on the side with this? A salad, maybe?
