Peppermint would be great. Guilty pleasure; in the winter I would make regular hot chocolate and add peppermint schnapps to it. So delicious, and double the warming. Nothing better than that when watching a hockey game, or even just curling up on the couch with a blanket.

I would do it on my stove, I'm sure it'd be better, but the point of this little experiment was finding a guilt free hot chocolate that was as easy to make as my normal tea just before bed. I warm the water for that in the microwave as well and pack my lunch for the next day while it steeps. With this, I just skip my milk with dinner and have it just before bed, so all it adds is like th 20 cals from the cocoa powder, which there isn't anything bad in. Melting a few dark chocolate squares sounds like a great way to add to the richness, and 2% milk would help a lot as well.

Sounds delicious! I don't have a microwave, but I am definately trying this soon on my stove. Maybe melt a few dark chocolate squares in there...mmm.

Just...have you ever tried any other extracts besides vanilla? I bet almond would be good...or peppermint. Or orange! Mmmm!

So I made it last night with much more sucess. Added 1 T cocoa powder, .5 tsp stevia. and just a little bit of milk. Stirred this up as best I could. Added slightly more milk and zapped for 5 seconds in micro to melt cocoa. Then when I stirred I got the paste. Added rest of milk and stirred. Microed 1 min. Took it out just as it frothed, but it was still a little cool so I put it in for another 30 seconds. Took it out just as it foamed again. Added .25 tsp vanilla and a little cinnamon and nutmeg. Got the flavor right. Very chocolatey and good. Only drawback was, indeed, that it was thin which I don't think can be helped with skim milk. But this is definitely doable for me now and only dirtied a single mug!

The hot chocolate stick recipe does use cocoa, it just also uses other chocolate as well.

I make a simple coco syrup....a cup of water, 1/3 cup of coco, a dash of vanilla and cinnamon and splenda to taste. I cook on stove top, medium heat, stirring constantly with a whisk until bubbly and smooth. Cool. Place in container-I use squeezable plastic condiment in fridge until ready to use. Just a few shakes, squeeze into warm/hot milk and stir. Enjoy!

Personally I would make it on the stove. Stir constantly and a double boiler or Bain Marie would be a good idea

I make hot cocoa for my kids and a milk frother wand works amazingly well to blend the cocoa powder into the milk. IKEA sells a cheap one:

Most kitchen stores should have something similar, too. I resisted buying a single-use kitchen tool but finally was defeated by the bitter bubbles of cocoa powder lurking in the milk and congealing at the bottom of the mug.

Yeah, kinda commited to using the bunch of cocoa powder I have. buying for 1, its kind of annoying how much extra stuff i have to go through.

But lowering the power on the microwave... why didn't I think of that. I kept thinking it was the timing. Hopefully tonight goes well now that I learned the mix cocoa into a paste method as well. Now just gotta get the amounts of cocoa, sweetner, and milk right but that'll probably just take a little trial and error

Are you committed to the cocoa powder route?
I make "hot chocolate on a stick": basically, a blob of chocolate and cocoa powder and some sugar that hardens, and then you heat up the milk, and stir it in. It's so.good.
You can make the hot chocolate sticks whenever you have time and they stay good for awhile. (Like, weeks.) I could give you a link/recipe if you're interested.

I'd also go with a higher fat content milk if your diet allows, otherwise I think hot chocolate is just never satisfying. (I have no idea how people enjoy it made with water!)

As for the bubbling over, your microwave could be too powerful. Try a longer heating time but on half or 75% power.

And I did some hunting on google and finally found out why the chocolate wasn't dissolving well. Found some people saying to addjust a little bit of milk to the cocoa powder and mix that into a paste. Then adding the rest of the milk. I was just dropping some in at the end and mixing. If this works, I just need to figure out how to get it hot enough in the microwave without the milk foaming over. Trial and error I guess.

Its not the artificial sweetners I have a problem with, its the creamer they add. Read the ingredients on one of the diet packs once and it listed a creamer I know has partially hyrodgenated oil in it. Even in the small amounts, I know that creamer really upsets my stomach.

You could try almond milk to get the thickness, although it's not as sweet as dairy milk. You could also just buy the "diet" packets of cocoa mix that have 25 calories or whatever, sinc eyou don't seem to have a problem with artificial sweeteners.

Thanks for the reply. I was just saying that I have stevia and splenda both on hand for options for ingredients if anyone wants to share how they do it. I only ever have skim milk becuase I drink 2-3 glasses a day, every day, and 2% turns into a calorie/fat bomb with those amounts. Not enough fridge space to devote a section just for this, although 2% may be the solution to the thickness unfortunately.

And if its possible, I'd like it to be able to be done in the microwave for the convinience at night. Would rather not dirty a pot and wait for a burner to heat up every time I just wanted a glass of something.

I don't now or ever used a microwave. Why don't you try it the old fashioned way and warm it in a pot on the stove. Easier to control and you will be stirring the chocolate in the milk. Use Stevia over splenda. (despise splenda). You shouldn't put splenda and stevia in it anyway because both are technically sweetners.
Skim milk may be an issue as well since it is more watered down. You may not be able to achieve the nice thick drink that you are looking for. Maybe go for 2% milk. Not that bad and it is a little thicker.

This is frustrating me. I have skim milk, cocoa powder, cinnamon, vanilla, stevia, splenda, and a microwave all at my disposal. Why can't I get this right? All I want is a guilt free, warm, comforting drink before bed. I know that it won't be quite as good as traditional hot chocolate, but I'd still like to have this *cries. Plus I have major sleep issues, and last two times I had this I fell asleep fairly quickly, so maybe there is something to the whole "Warm glass of milk" before bed thing. Normally I just have herbal tea which helps sometimes. But I kinda like this since its a little thicker. Wish it could be made nice and thick.

I got off track, but the first problem is that so often the milk bubbles over and makes a mess in the microwave. Even when I heat it correctly, it doesn't seem quite chocolately enough, but there is lots of extra cocoa powder in the bottom so its saturated. What are the amounts of each ingredient you use, and how exactly you microwave/prepare a single serving hot chocolate?
