I am intruiged by the taco bowl molds Update on how they work!

Another idea would be to have a serve yourself taco/nacho bar, if you aren't doing a sit down meal. You could have all sorts of toppings from really healthy to the not so healthy. Easy to accomodate vegetarians, low carbers and carnivores all at the same time!

I like to riff on the basic fajita theme, making it healthier with more veggies. Instead of just peppers and onions, add in zucchini, carrots, cauliflower and broccoli. Make plain black beans instead of fatty refries, and some brown rice with tomato sauce and chile powder. Marinate lean meat with lime juice, oregano, cumin, jalapenos, olive oil and salt, and grill. Set out corn and flour tortillas with salsas, guacamole, lowfat sour cream and hot sauce and let everyone build their own fajitas. You can also provide salad greens so people can make taco salads if they want to eschew the tortillas.

Thanks. I'll give it a try next week. Just made the Salsa Chicken from the SparkPeople Cookbook. Going to start posting "reviews" next week. Thank you again for the suggestion and recipe. Also, I'm getting the tortilla bowl molds to bake in the oven!!!

I found this great recipe for Tex-Mex chicken in a crock pot:
1 lb. boneless chicken breasts cut into 3/4 in.strips
2 T. dry taco seasoning
2 T. Flour
1 green pepper cut into strips
1 red pepper cut into strips
1 c. frozen corn
1 1/2 c. chunky salsa
Toss chicken with seasoning and flour in slow cooker.
Stir in veggies and salsa.
Cook on low 6-8 hrs or high 3-4 hrs
(I did 1 hr. at high and then low for 5 hrs.)
Also, I added extra tomato sauce/picante after the 1 hr. as it seemed dry.
Serve in bowls w/tortilla strips.
Really good. I suppose your could increase all ing. appropriatley?

Went to the link already and emailed the recipe to myself. The picture makes it look awesome. Thanks so very much. The taco bowl is a great idea as well .... I could have some carbs there for those not avoiding them. I appreciate your response. emoticon

There's a great chicken enchiladas recipe from Cooking Light that I've made many times:

I also like to do a taco bowl, where I put everthing I'd put in a taco (ground beef or turkey, lettuce, tomatoes, onion, salsa) in a bowl, minus the carbs. I add some freshly chopped cliantro and black beans, and a dallop of greek yogurt to sub in for sour cream.

Does anyone have good Mexican Meal recipe suggestions? I'm looking for salads, side dishes, main course, desserts, etc for a Mexican theme party & would prefer to use SparkPeople recipes. I'm waiting for my SP Cookbook copy to arrive at my local library and there's one person ahead of me that has it on hold. There are just so many recipes on here, so if there are any you've tried and liked/not liked please let me know. Thanks in advance!
