2 hard boiled eggs, an orange or an apple, 4-6 walnuts

Try wrapping thin slices of lean deli roast beef around short bread sticks.

Cubes of lean ham or turkey breast are also good. You can buy wooden skewers that are disposable and add fruit like cantalope, honeydew or maybe shrimp skewers.

Cherry tomatoes, cucumber slices, cottage cheese

1-ounce mozzarella cheese stick, Peanut Butter on celery stalks, an apple

Graham crackers are convenient & portable. LOVE THESE WITH A THIN LAYER OFWHIPPED BUTTER ON THEM. (Only a smidgen)

I like making spring rolls and sushi rolls (though I use meat or just veggies, and it's really easy).

You can also have your sandwich as a salad - just chop everything up and put it in a bowl and leave out the bread.

Being in an RV, can you use a blender? You can make a fruit smoothie, green smoothie, or blended soup very quickly and eat that while you're on the road.

Another option is to use a large leaf to wrap your sandwich in. While I'm ordinarily not a fan of iceberg lettuce, the big leaf cups are pretty easy to work with. Romaine can be great depending what you're eating. Collards are the most versatile, if you get the big leaves.

You might also try soy wrappers if you can find them. You use them like tortillas.

Bacon, Egg, Avocado and Tomato Salad

hard boiled egg (chopped up and mashed a bit)
1/2 or 1/4 avocado (chopped up and mashed a bit)
2 slices cooked, crumbled turkey bacon
1 tomato, chopped

Mix altogether. Add salt and pepper.

"Gut" a tomato and fill it with tuna salad (however you like to make it). Add some grapes or a banana on the side and you've got a balanced lunch!

Fruit salad topped with yogurt and a little granola. Perfect as the weather gets warmer!

Cut up some fruit and eat it with hummus, or like others have posted, do a big salad with some type of chicken, tuna, etc. One of my all-time favorite salads is a bed of spinach with chicken, strawberries, almonds, and feta cheese. SO yummy.

Sometimes I just crave a good sandwich - and tuna is my favorite. So i do indulge about once a month.
Mostly I just eat a big plate of salad - and a piece of fruit (which I am trying to eat more of).

This is a great lunch for me, and a way to eat cold canned fish (tuna) without grains

It may be hard to cut up all the veggies in an RV, but if you have a mini fridge and a knife and cutting board, it should be easy.

Can you get cold roasted chicken? Sometimes a leaf salad with cheese or meat on it is pretty good. Fruit and cheese platters, there is some sort of platter that involves cold mozerella and tomatoes with fresh basil.

I'm wracking my brains for a good way to eat cold canned fish without crackers or sushi rice.

I've eaten yogurt, fruit, and crackers for lunch for as long as I can remember. Not a big fan of sandwiches and have had lots of jobs without a microwave. There is also cottage cheese or lowfat cheeses. I do like wraps. Use a whole grain tortilla with a little lowfat cream cheese, deli meat, lettuce and other veges. People also use lettuce leaves in place of the tortilla. I've never done that, but it could be an option.

I'm currently traveling in an RV which means we eat a lot of our lunches "on the go", ie, in the car. I'm so sick of sandwiches and trying to reduce my grain intake in general. Anyone have any lunch ideas that I could make quickly that don't involve bread?
