I stumbled upon a different snack, breakfast, lunch or could be a dessert:
Low fat cottage cheese or ricotta
Top it with homemade unsweetened applesauce with a little cinnamon

I was out of canned applesauce the other day, so I boiled 3 peeled and chopped apples in water, until I could mash them. I used red delicious and they were so sweet; cinnamon red hots would have been nice too but unnecessary - it looks pretty that way though! I sprinkled less than a tsp of cinnamon sugar but could have just used cinnamon. I have always liked cottage cheese with apple butter. You could even sprinkle a bit of granola on too

Looks like there's been a couple of suggestions that incorporate whipped cream. If you have a mixer (stand or hand) it's fun to make your own! Just buy heavy whipping cream (add vanilla or an extract flavoring if you'd like) and beat the heck out of it with the whisk attachment for the mixer. Before the peaks form, add whatever sweetener you like in whatever amount you want. I like to use stevia and just barely add any - I don't need too much sweet when I serve it with berries and oatmeal.

1 9-inch prepackaged pie crust
11.4-ounce package of sugar-free, fat-free chocolate pudding mix
1 2/3 cups fat-free milk
18-ounce container of fat-free Cool Whip, divided
2tablespoons mini semi-sweet chocolate chips

Preheat oven to 400 degrees. Bake pie crust according to package directions. Remove from oven and cool thoroughly.

In a medium bowl, whisk pudding mix and milk. Fold half (4 ounces) of Cool Whip topping into pudding mixture and fold until fully blended.

Spread pudding mixture into pie crust and top with remaining Cool Whip topping. Sprinkle top with chocolate chips.

Place in fridge for a few hours or overnight before cutting into it.



2 (8 oz.) strawberry sugar free yogurt
1 (8 oz.) sugar free Cool Whip
1 cup crushed fresh strawberries

if you want to change the flavor change both yogurt and fruit
example : blueberry yogurt and fresh blueberries
raspberry yogurt and fresh raspberries
etc etc

Mix well and make some fruit shish ka bobs !!
Skewer your favorite cut up fruit and dip away.

Thanks for asking about this. I am not diabetic but I like to limit my sugar, fat and cholesterol intake as well. I found the responses useful. emoticon

I do a recipe with non-fat vanilla or even plain yogurt, an angel food cake, sliced berries (unsweetened or use Splenda) and a little bit of whipped cream on the top.

I take the yogurt (650 to 750g container) and mix with splenda to sweeten it (when I use plain). Cut the cake in half (side to side) and make it like a trifle. Layer of yogurt, then fruit, then cake and repeat.
My dad is a Type II diabetic and this is my go-to recipe for when he comes over.

Weigth Watchers has a pumpkin muffin recipe - just a spice cake mix and a 15 oz can of pumpkin (not pie filling). Mix together and bake in muffin tins at 350 for about 12-15 min. (batter will be stiff).
They are 97 calories each, taste like pumpkin pie.

I'm sure you could use splenda since it already has the sweetness of apples and cinnamon and the amount of added sugar is very small

Hi! I am looking for some holiday dessert ideas. I have several restraints on my diet. I am diabetic, so I need it to be no sugar (unless it is fruit that causes it to be sweet). I Also Have to Watch My Fat and Cholesterol Intake. I want some healthy options to add to my families holiday meals... because I would really like to enjoy dessert just like everyone else. Can anyone help me, please. Thanks
