shrimp fried rice is one of my go-to meals when i'm REALLY hungry and want to feel full without the guilt.
the key is veggies.
chopped onions and mushrooms, and then i add frozen peas and carrots (thawed)
shrimp chopped up (i get mine frozen, precooked and peeled already)
then add some rice (not too much though 3/4 cup is more than enough for one person's dinner). it can be brown or a white/brown blend.
then crack an egg over it, or use egg whites and keep on frying.
Delicious! All the veggies really stretch out the rice so you don't miss the carbs, and the lean protein fills you up.
also, why stick with fishsticks? how about grilled salmon? or talapia?
try a totally meatless meal and do a vegetarian chili, or a veggie fried rice.
