Go the darker- has more minerals and alkalinity. Nothing wrong with the green, but I prefer the red or purple. Tastes the same. also better antioxidants in red kale.

I don't think there is any difference in nutritional value and if there is it is minimal. Here are some references:

A store I went to recently not only had red and green kale, but also black. Might have to check out those other varieties some time.

Eat because it gives the body ORCA red or green irrelevant.. Food rotation especially any new vegetables is a great addition to one's nutrition..

the nutrient content will be different from the green kind but the calories should be the same or at least close enough to not matter.

At my husband's request, I'm about to make a batch of kale chips (my FAVORITE afternoon snack!!) using red kale instead of green. I'm assuming it has all the benefits of regular curly kale, but with more antioxidants due to its color. Opinions?
