I have a Polar HRM with a chest strap and an hour with my Personal Trainer usually burns off 500-600 calories...I would say yours is a little high, I also find that Elipticals over estimate as well...treadmills are generally pretty good, but somtimes are too low.
I gave my trainer my food tracker for a week from Spark. She agreed with all the ranges except the calorie range I was given. Spark gives me 1200-1500 (with a goal of burning 2000 calories a week in the Fitness Tracker), but burning 500-600 calories per work out will give me too big of a deficit and my body will go in to starvation mode (not letting you lose weight). She recommended that I should be eating 1500-1800 calories.
I suggest eating at the higher end of your range most days, go over it a day or two and go on the low end a day or two...keep your body guessing!

Calories expended are based on the amount of oxygen one consumes during her exercise in relation to large muscle activation which in turn leads to an increase in one's heart rate. The HRM uses an algorithm based on your data and then calculates your caloric expenditure. As Archimedes pointed out, this is just an estimate of calories burned.
My suggestion to you is to make sure your calories burn goal on your Start Page under the My Goals and Progress section reflects the calories you are expending. This may or may not change your calorie range depending on the other factors--current weight, goal weight, time to meet your goal weight, etc. If after 3-4 weeks you are still not seeing results, then you may want to review your calories burn goal.

Depending on how intense your workout was, at your current weight 700+ calories burned for an hour of cardio is not out of realm of possibility.
BUT, I would take that reading with a grain of salt. HRMs aren't perfect either. What to do is take readings over several classes and get an average. Some days you may get a reading higher than others. If you track your readings over several classes, you'll start noticing trends.
So, let's say you did burn 700 calories with an hour of exercise. then yes, if you were to eat 1200 calories, that would mean your body had 500 to use for the entire day. Some people thinks that's okay, but it's not. Eating too little and exercising too much can hinder a person's weight loss, not help it.
On days you burn extra calories, you should be eating a bit more. How much ? Hard to say because there really is no exact way to determine how many calories you're burning or eating. We're taking educated guesses.
Also, you have to understand that the weight doesn't magically drop off the minute we decide we need to lose. This is not the Biggest Loser. those types of dramatic losses are just not typical. In general, a safe weekly weight loss would be 1-2 pounds per week. BUT, there may be weeks you don't lose. there may even be weeks when you gain. that doesn't mean you're doing something wrong.
You didn't gain the weight overnight. it's not coming off overnight.
If you continue to eat right, watch your portions and get some regular exercise that includes some strength training... you will see change with time. But you do have to be patient with yourself and your body.

I cross-posted this from the exercise board, but no one has answered, so I thought I might try here, where I have found help before. :)
Okay, so I went out and bought a HRM I wear on my wrist and I check/update it every other minute or so to be as accurate as possible. I input my age and gender, but it doesn't track weight I guess. So, I just did a full hour of cardio dancing w/ the Wii and worked my behind off!! The HRM says I burned 778 calories. Is that even possible?
-----AND if this is true, then this is about what I have been doing nearly every day and still only eating 1200-1500 calories. Wouldn't this be too little? Could this be why I am losing so slowly?
