I haven't eaten any dairy since 2007 -- and it's worked out really well for me. My main sub is soy milk, which I typically just have in my morning coffee. Otherwise, I'll occasionally have non-dairy based yogurt, Daiya cheese, Earth Balance, Tofutti Cream Cheese, non-dairy based ice cream. I try not to have too many of the subs and just get nutrients through other less processed food, but it's nice to have them around.
2 to 3 servings a day. I don't eat a lot of meat so I get a lot of my protein through dairy. I especially love Greek yogurt. I usually have various forms of cheese in my fridge including shredded, string cheese, and cottage. I rarely drink a glass of milk, though. I don't care for it unless it's steamed with a shot or two of espresso added.
I might eat 1-2 ozs. of cheese 2-3 times a week at most., but most weeks I don't even do that. Not a huge fan of dairy. I don't like milk or yogurt, and cottage cheese is too salty.
I have 8 ozs of swiss in my fridge, and may have 4 ozs in the next 2 weeks, and have to give the rest away. I do like feta on my salads.

Around 1-2 servings. I thought it was a lot more but I just looked up the serving sizes of dairy products... I usually eat around 1/2-3/4 of a cup of yogurt and/or cottage when a serving is 1 cup. I eat around 20-40g of firm cheese and a serving is 50g and sometimes 1/4 cup of ricotta cheese. It works out to about 1-2 servings on average.
I can't drink milk because I'm intolerant, I use almond milk for my coffee and cooking/baking but am not bothered by yogurt or cheese.
