I would recommend against skimming off the fat. Leaner meat is not healthier. Low-fat diets have been shown in recent research to not work very well compared to high-fat diets including saturated fat from beef. My macronutrient ratios are about 80% fat, 15% protein and 5% carbohydrate and both my weight and my bloodwork are much better than on a low-fat diet. Calories are much higher in fat but fat will make you feel satisfied and full. Carbohydrates on the other hand will trigger insulin production and thereby fat storage. Birgit

Nope :) I skimmed it into a glass and (as a testement to my housework skills haha) I left the glass on the bench over night. The fat that was at the top solidified and the juices/gelatine etc. had sunk to the bottom. There was a full half cup of solid fat afterwards with the juices etc in a separate layer underneath. So there'd be a portion of the 'fat' layer that was not fat... But it would be a negligible amount.

All fats have roughly the same caloric content, in the neighborhood of 100-120 calories per tablespoon, so if it really were a half cup of pure fat, it would be about the same calories as half a cup of oil (800 - 960).
BUT... It wasn't pure fat. Some of what you skimmed off was water from the vegetables, etc, and gelatine from the meat. It's still definitely useful to skim it (and you can do that even if you cook on the stove; just chill it in the fridge, skim, and reheat), but if you can't, you're not eating an extra 960 calories.
1/2 a cup of tallow or beef fat is around 900 calories.

I'm curious. Today I bought a slow cooker and I cooked my favorite curry in it for tonight's dinner. The cooker itself allows me to not have to stir it as the low heat won't burn the food. That meant that for the first time ever I was able to leave it and allow the fat to rise to the surface. And to my dismay and absolute disgust a meal that I thought was relatively healthy had a HALF A CUP of fat floating at the top!
I know that chuck is a fatty cut, it's part of the reason that it's so cheap. But half a cup to a kilo of meat... Wow! And in the past we would have eaten that curry with the fat in it without even knowing just how bad it was. So I got curious and google searched it and nope... Nowhere can I find how many calories are in a half a cup of fat.
This is more for curiosity's sake than anything, but I was wondering if anyone can actually tell me how many calories are in a half a cup of fat so that I can adjust my recipe. Because you can bet your sweet nancy from now on I'll be skimming it every time I make it!
