I make different veg burgers all the time - and those ingredients sound perfect. Usually use some sort of a lentil/chickpea/legume and mash it/process it with veggies cut very fine (or also processed). Onion always adds some flavour. And then a starch (brown rice, bread crumbs, cornflakes ) also mashed in to it. Sorry don't have quantities but the lentils etc dominate and I add just a little starch to give it bulk/substance and you can tell when they are the right consistency when you try to form it in to patties. Egg helps bind, but sometimes you don't need that either. I then spice it up or use herbs (have used bits of olive sometimes and chilli) and lightly fry or bake... Sometimes have it with home made tzatziki sometimes with a tomato and onion base - or if no oniions in the burgers then just lightly fry some onion to put on top. Enjoy!

Do you eat eggs?

I dice mushrooms and add them to my veggie burgers quite often (I do use a black bean base- but I imagine lentils would work in place- maybe partially pureed/mashed). The burgers do hold better with an egg/egg white but there are other options like flax or maybe chia seeds that would help them bind.

I would cook up your veggies and mix with mashed lentils and quinoa/brown rice. Bind with something (maybe add some breadcrumbs as well).

I'm looking for a recipe for homemade veggie burgers. I have mushrooms and spinach I need to use up, and I also have things such as brown rice, lentils, quinoa, and onions. Does anyone have a recipe using any or all of these ingredients? Thanks:)
