Hello! We found out last summer that my dad had blood clots in his lungs, and now he's on a very strict diet. It's a low sodium healthy diet, but he also has to be careful about his vitamin k. If he has anything with vitamin k, he has to have it a couple days in a row. As an example of how strict this diet is, he can only have a couple slices of turkey a day. He can't have certain lettuces, either. It's been really hard trying to come up with decent recipes to make so that it doesn't become tedious, and my parents are already starting to stray from the diet.
Anyone out there have any suggestions or recipes that I can make to help my dad stick to his diet? Any help would be appreciated! Thank you!
