this one is from my WW days; when I was almost out of points it was my favorite dinner:

spaghetti squash with veggie marinara (yellow squash, zucchini, mushrooms, asparagus, spinach, peppers, onions simmered with tomato sauce or a can of chopped tomatoes). LOTS of food for not too many calories. Also really good with some cottage cheese added (gives it a lasagna taste)

I LOVE spicy food, and have been roasting cauliflower sprinkled with cayenne pepper... ridiculously good.

For a yummy dessert, i love a bit of sugar free chocolate pudding with sliced strawberries on top, and a little dollop of FF rediwhip. For about 80 calories, it's decadent.

And I'm totally going to try that taco salad!

The other day, I toasted a slice of light whole wheat bread, spread it with Dijon mustard, added shredded 2% sharp cheddar and 1/2 a thinly sliced Granny Smith apple, and put it in the oven until the cheese melted emoticon . About 170 calories and very good.

I use Flat Outs for pizza crust too. And pitas. Some pizza sauce, a little mozzarella, various fresh veggies, and Canadian bacon - it's awesome!

last night I went to the grocery on the way home because I really wanted some Greek yogurt. I thought I'd picked up vanilla, but I grabbed plain. The only fresh fruit I have right now is grapefruit or apples. So I stirred in a little Pollaner all fruit. Tastes great! Cranberry sauce is also really good mixed in with yogurt.

I LOVE, as in LOOOOVVVVVVVEEEEE taco in the dip spread on a platter and topped with tomatoes, black olives, lettuce, & cheese. It's not such a bad dip using reduced sodium taco seasoning and rf or ff sour cream, but my issue is the chips I like to eat the dip with! So, I got creative to make my beloved dip a meal.

I have Tortilla Bowls (as seen on TV) and bake an Ultragrain tortilla to create a crispy shell. Then in a regular bowl I mix the ff sour cream with the taco seasoning. These two steps are done in advance. In a crock pot I cook chicken breasts.

At the time of my meal, I grab a regular bowl to mix the taco dip, lettuce, tomatoes, black olives and cheese. I stir it all together really well and then stir in some of the shredded chicken breast for protein. Once it's all mixed together, I put it in the crispy tortilla bowl! I can break off the sides of the tortilla bowl and "dip" it into the dip! It's a satisfying meal that covers some veggies, whole grain, and lean protein. Mine comes in at under 200 calories.

I love it and highly recommend.

Since I have been back to Spark I have started making pretty darn good little concoctions! Last night for desert ( wanted desert and hubby was eating Heavenly Hash ice cream,LOL) I mixed one tablespoon of 1/3 fat cream cheese, a tablespoon of peanut butter, a teaspoon of honey, and a quarter cup of dried cranberries in a bowl. I then spread the mixture on a caramel flavored rice cake and sprinkled it with cinnamon. I couldn't believe how good it was! Next time I am going to do just cream cheese mixed with thawed previously frozen organic blueberries. They have this sweetness and this juice that reminds me of blueberry pie and I think paired with the cream cheese on top of the rice cake with be amazing!

Today for lunch I used a FlatOut 5 Grain Flax Fold It as pizza crust. Brushed it lightly with olive oil as it said on the package. Sprinkled it with Italian seasoning and on the side I put a cup and a half of fresh spinach drizzed with olive oil and a dash of salt, and two cloves of chopped garlic to bake with it on 350 degrees for 4 minutes. When the 4 mins was up I flipped the "crust" and let it cook for an additional 2 minutes. Then I topped it with last night left over spaghetti with ground turkey meat sauce, the spinach, garlic, and 1oz part skim Mozzarella. I popped it back in for another 4 minutes and let stand for 1 minute. It was so good! I can't believe the things we can create that are healthier and equally as yummy when we put our minds to it.
