I have frozen quiche a few times but the crust is never as good as when its first made. When you reheat it in the oven the inside tends to overcook. Try using an individual pie plate to make 1 serving and you can freeze the crust for a later use.

I have never had a problem freezing quiche. I do not freeze it whole. I slice it. When I want to eat it I let it thaw in the fridge. Then reheat in the microwave. If you use a crust, I reheated in the oven to crisp up the crust.

I'm thinking of making a veggie quiche tonight for dinner, but I'm worried about leftovers. I know quiche can taste good at room temp or chilled, but I'd like to freeze it now and enjoy the leftovers next week or later. How well does quiche stand up to the freezing, thawing, and reheating? Any info is helpful, thanks!
