Eating the wrong amount of carbs affects my Glucose readings.

About 50% carbs is what's recommended by registered dietitians as being healthy. Carbs aren't evil and you don't need to cut them out or eat low carb to lose weight. The problem with carbs is that a lot of people eat a lot more than the recommended 50% and the carbs that they choose to eat aren't the healthiest choices (either in and of themselves or due to the fact that they are prepared with unhealthy fats). Sugary drinks, potato chips, donuts and other pastries, etc. are some examples of not-so-healthy carbs (some paired with not-so-healthy fats). These foods are basically empty calories because they are just that...calories with very few nutrients and they aren't even good sources of fiber. It's actually possible to be nutrient deficient and obese at the same time if you eat a lot of these foods. Baked french fries (without added oil), whole wheat bread, brown rice, whole oats (e.g. oatmeal), sweet potatoes and other vegetables and fruits are healthier choices. They contain fiber and some of them are absolutely packed with vitamins/minerals.

No, they don't say that at all! Our body needs carbohydrates. However, sometimes you can have a diet that is overloaded with carbs.

I find that since we are all individual, any one diet will not fill all people. I have found for my self that watching certain types of carbs help me stay on track. When I eat white bread I find myself hungry all day, but an apple keeps me full. I am an advocate of food journals, write down what you eat and see how your body deals with it. You will have to limit some foods to see what the effect is but within a few months you will see what foods give you better results. You will never be able to eat perfectly but being mindful of your diet is more important than following any particular diet.

Carbs are good for us especially when combined with protein. My ratio is 55% Carbs, 25% Protein and 20% Fat based on my BMR and a discussion with a Sports Nutritionalist.

Carbs are not evil. The problem is that people don't understand what that means, and the proliferation of low carb diets has lead people to believe (erroneously) that all carbs are to be avoided. Quality matters!

Then again...
A baked potato with green onions, ground pepper, and a dollop of plain greek yogurt is incredibly satisfying. 6 ounces of grilled skinless chicken and vegetables is ~400 and some change calories.

Lots of carbs from the potato, but that's my kind of meal. It's a lot of food and makes me feel full.

I wouldn't avoid that meal anytime soon.

I love foods that are high in carbohydrates.

According to Atkins' "carb counter", a can of ice cold Coca Cola has "35 carbs"
They have "omitted pizza chains from the listings because other than baked chicken wings with Buffalo sauce, their offerings are inherently high in carbs"

Both of those things also represent a ton of calories.

But yeah, I avoid carbs. Not to cut carbs, but to cut calories. I can have a two chicken sausages (Johnsonville, 170 calories x 2) with a whole mess of peppers, onions, etc. and a little BBQ (1 tbsp of Sweet Baby Rays 35 calories) sauce or something similar. For a total of 375 calories and some change.

Or I can have single sausage on a bun (110 calories) with BBQ sauce for a total of 315 calories.

2 whole chicken sausages with peppers/onions etc. is a PILE of food and feels like an entire meal to me. You can only fit so much other 'stuff' into a bun, unless you go with an Italian roll (at 200 calories or more!). One single sausage on a bun doesn't seem like nearly as satisfying of a meal as does the plateful of other stuff.

For just 60 more calories, I'm getting a ton more food.
So, yeah, I often avoid carbs but not for the carbs sake. It's for the calorie savings that I replace with other things.

I'm not fond of the whole fad. I get why it's somewhat good for some people - if you have a problem with eating too many worthless carbs, it can be a way to break that habit. But people don't seem to think about what they're doing and why. Also, what's the point of cutting out worthless carbs if you're just replacing them with other unhealthy foods? One trick won't cut it. You have to think carefully about all choices you make, not just follow some magic solution.

I hate low carb diets. You're body needs carbs. When they lower carbs in foods they add other garbage and toxins you don't need. I also don't like low fat. Again your body needs fat to burn fat. Just depends on the kind of fat.

I've heard a lot of people say that they love carbs! I've heard some people and diets are focused on being Low Carb! I get to the Spark People web site and they promote 50% carbs as to be the healthy portion with sound like they are saying, eat more carbs. I know that eating right is key but I believe the message is not being communicated properly. What do you think?
