Thanks a bunch for the tips. I, for some unknown reason, always thought you had to put liquid in the crock. Silly me, this is great, it opens a whole variety of things to do now.

One other thing my husband and I love is turkey thighs in the crockpot...just season, let cook, sometimes with a bit of low sodium broth. Not only do you get wonderful meat, it's a great base for the next day's soup!

I'm a big fan of the crock pot and I will make a full family-size meal or two and freeze portions for work lunches (or dinners).

One of my favorites is to get a pack of drumsticks (I am anemic and the dark meat has more iron and B12) and toss them in frozen. I'll just pour some barbecue sauce or Trader Joe Soyaki sauce and let them cook while I'm at work. They are so easy to portion out for meals later.

Yesterday I needed something for lunch today so right before I went to bed I threw in some chicken tenders, a little olive oil, some chicken broth, a jar of marinated artichoke hearts, a jar of Trader Joe red pepper spread and garlic. A little microwave quinoa while I was in the shower and I had lunch for today. It smelled amazing. I'll let you know if it was any good. ;-)

I've also cooked fish in the crock pot. A frozen filet in a foil packet with a teaspoon of soy sauce or light mayo or olive oil and some lemon pepper and they are amazing! No water in the pot needed. On high for 4 to 6 hours did the trick. I should try aoili...

Great idea. I never would have thought to use my crock for that. This opens the door to several other ideas. I will put it in my "recipes to make" book. Thanks a bunch.

I marinated a small London Broil overnight, then wrapped it tightly in foil and put it in my crockpot for the day on low... when it was done it was a wonderful, tender, tasty bit of lean meat with leftovers for lunches and another couple of dinners. The second night I mixed some of the shredded meat with salsa and black beans and ate it on a bed of shredded cabbage with a little sharp cheddar shredded over it.

I like a can of cream of chicken and lots of chicken tenders till done ! emoticon You can freeze them into servings in pint freezer bags then put them in a gallon one. Have a variety in that bag . emoticon

Take the average recipe on SparkRecipe, like the delicious salsa chicken, and halve for a good 2 person meal. Do you have room for leftovers for the next day's lunch? You'll have enough and stay within your diet means. You might even look at the number of portions and divide by three. I frequently do this for my beau and I because we're prone sometimes to really enjoying our meals otherwise.

A better idea is to freeze and package the meals. Provided, of course, you have the freezer space. Get some solid Tupperware or disposable freezer-friendly containers, plop the extras in and you have a meal right away!

chunks of beef or pork in crock pot for 6-8 hours.
shred meat and store in zip lock baggies.
I flatten the baggie before freezing for quick thaw!

I sometimes put a chicken breast in my smallest (tiny) crockpot, cover it with some teriyaki sauce and let it cook on high until done. It forms a nice glaze on the chicken. I usually serve it with a little brown rice and some steamed veggies.
