Try a curried squash soup, perhaps? Clean out the seeds and slice off the skin. Chop into squares, boil like you're making mashed potatoes. Drain the water and add lite coconut milk and curry powder, blend into... soup! Or you can serve over brown rice.

You can shred zucchini or yellow squash and add to soups, spaghetti sauce, scrambled eggs, meatloaf/meatballs.
I spiral cut them and make some yummy marinara or pesto sauces to top them off. I also have a squash dish I make with apple cider vinegar that is absolutely to die for. I also juice them.

Winter squashes can be used in any way that pumpkin can.
There are soups, sauces, baked goods, plus just as a vegetable (like a sweet potato). Squashes and sweet potatoes are some of my favourite things to have around, because no matter what types of spices/seasonings you have on hand - they can be made to taste entirely different from one meal to the next.
Then, there's spaghetti squash - the versatile, vegetable, non-grain pasta.
Summer squash (zucchini) can be eaten raw or cooked (stir-fry, baked, seasoned, added to soup ...)
The list could be nearly endless.

Hi so I am not much of a vegetable eater (except for salads) and I am trying to find unique ways to add some more veggies to my diet. I have been adding spinach to my smoothies and I love that so I am wondering if there are any creative uses for squashes out there....
