The Baked Chicken and rice recipe sound delicious and easy! I think I might have to give that one a try!

Here's one I like. Additional seasonings can be added to taste. I think I pulled this off the a can of soup.

Recipe for: Baked chicken and rice
Serves: 2-4

2-4 Chicken Breast
1 can (10 ¾ oz) Cream of chicken soup
¾ cup of uncooked long grain rice
1 1/3 cup of water
½ tsp paprika
½ tsp pepper

Recipe instructions Preheat oven to 375 ‘F
Stir soup, water, rice, paprika, and pepper in a 12X8X2 baking dish.

Season chicken as desired, then place on top of mixture and cover with foil.

Bake for 45 minutes

Helps if spray the pan, unless you enjoy a bit of crunchy rice.

Italian Chicken

1 pound boneles skinless chicken cut into bite size pieces
1 green pepper chopped
1 small onion chopped
as much as you like minced garlic
olive oil
a box of pasta - your favorite shape
1 jar your favorite pasta sauce

Boil pasta to box directions

Drizzle olive oil in a fry pan and saute the chicken, when it is almost done add the green pepper, onion and garlic. Cook thru.

Serve chicken mixture over pasta and sprinkle some parmasan cheese.


Chicken Stir Fry

1 pound boneless skinless chicken cut into bite size pieces
3 cups total cut up fresh veggies like onion, celery, green pepper, red pepper, broccoli florets, sugar snap peas etc etc
1 jar your favorite sweet n sour sauce or teriyaki sauce
hot cooked brown rice

Saute the chicken in a drizzle of olive oil until cooked. Remove and keep warm.Cook the veggies in the same pan in some water (they will steam cook) Once the veggies are crisp/tender add back the chicken and stir in as much sauce as you like.
Serve over brown rice.

Marinate it for at least 8 hrs in balsamic vinegar and garlic powder.
Place chicken pieces in bottom of baking dish.
Cover with diced fresh tomatoes, fresh basil, and a sprinkle of italian cheese. (use any spices you like here)
Bake at 375 until chicken is done.

Serve with roasted broccoli :)

This braised chicken thigh dish was ridiculously good, and surprisingly pretty low cal. I had a 6.5 oz portion (2 larger thighs) and it was only 303 calories.

This is delicious, and you could use thighs or breasts. I grilled mine instead of broiled:

I made this without the black beans, but added corn, and with about 3oz of chicken and the rice it was 352 calories.

Green chili chicken

This serves 4

1 1/2 pounds breast or thighs cut up fried in bacon grease
2 cans green chilies
8 slices bacon chopped
1 cup sour cream
1/4 cup mayo
1 cup sharp cheddar
1 tsp garlic powder
1 tsp black powder
1/2 tsp salt

Preheat oven 375. Mix chilies, cheese, mayo, sour cream, and seasonings. Place cooked chicken in casserole dish. Top with green chili mixture. Then top with bacon.
Bake for about 40 minutes.

My family are used to very flavorable dishes, like mexican dishes, does anyone have ideas of a good chicken dish with lots of flavor? A lot of our traditional dishes I was raised with are full of fat and carbs. Anything will help, thank you!
