I found a site that talked about freezing just the pizza crust (add toppings later) and it recommended flash freezing:

Flash Freeze Method
Arrange pieces of food on a cookie sheet or anything flat and freezable so that they are not touching. To do more than one layer, cover the first layer with wax paper and place the next layer on top. Cover tightly and freeze until solid. Once the pieces are frozen you can remove them from the tray and store them in a freezer bag. Since the outsides are frozen already they won’t freeze together, similar to bags of individually frozen chicken breasts.
Use this method for anything that you want to retrieve separately: pancakes, waffles, chunks of fruit, french toast, turkey burgers, pieces of lasagna or pot pie

I went back to my notes and I can't find anything about freezing (hate it when I don't save things like this). I'm sure I read about someone freezing the crusts and it seems that they tried both pre and post baked.

Another option is to freeze the riced cauliflower, which would save a lot of the time involved. The key is to make sure all of the moisture is out so you don't end up with mushy crust.

I've been wanting to try this again, including freezing but it won't be on the list for a while.

Cauliflower Crust Pizza


1 cup cooked, riced cauliflower
1 cup shredded reduced fat mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
Olive oil (optional)
Pizza sauce
Mozzarella cheese, shredded
Other additional toppings of your choice


Rice cauliflower using the food processor's shredder blade. Alternatively, you can grate the cauliflower with a cheese grater.

Place the riced cauliflower in a microwave safe bowl, add 1/4 cup water, and microwave for 6-8 minutes, stirring half-way through.

To make the pizza, preheat the oven to 450 degrees F. Generously grease a pizza pan or cookie sheet with olive oil or non-stick cooking spray.

In a medium bowl, combine the cauliflower, mozzarella cheese and egg together and stir until well incorporated. Add the oregano, garlic, and garlic salt. Transfer to the cookie sheet, and shape into a 9-inch circle. Brush the crust with olive oil to help it brown in the oven.

Baked at 450 degrees F for 15 minutes, until the crust is browned and cooked through the middle.

Remove the crust from the oven, add your sauce and toppings. Place under a broiler at high heat until the cheese is melted and bubbly. (About 3-4 minutes).

Allow the pizza to cool slightly, then cut into small slices and serve.

*use non-stick aluminum foil and mist with oil olive to prevent crust from sticking

I love that you posted this- I just pinned a cauliflower crust recipe to pinterest last night, and plan to make it tonight! I also love portabella caps, and I'm going to try the pounded chicken, too.

I went gluten free in January, and when my family had a pizza night one Friday, I tried the gluten free crust. It didn't go over well with me, so I'm going to try the cauliflower crust to make ahead of time, so I can play along when they have pizza. :)

Freezing is a thought. Make a couple or 3 of pizzas while everything is out and freeze in serving portions....... Wonder if the crust would stay crispy?

I tried it too and we loved it. I want to make it a again and try a couple variations. Haven't tried but read that you can freeze it, which would make the effort pay off even more.

I like both those ideas for a crust alternative when I need a faster, easier "fix". Thanks to both of you. I will say the nice thing about the cauliflower crust is that it was firmer like real crust. It does want to stick however. Fortunately the site I used recipe from mentioned this and someone suggested using non-stick aluminum foil with olive oil mist on foil as solution and that worked.

that sounds awesome, and something I will be trying.

I like to take a thin sliced chicken breast and pound out until ultra thin and use that as my crust. It also makes a fantastic pizza!

Oh I love the califlower crust too! The wheat crust makes me hungrier and spikes my sugar levels, so I don't do well on that either.

You might also try Portobella Pizza....just stuff the Portobella with your cheese, pizza sauce, minced garlic and favorites...Place the mushroom on a Pam Olive Oil sprayed baking sheet...Top with parm or romano cheese.

Bake for an additional 25 minutes, or until cheese is melted and golden. About 375 degrees. These are soooo good and sooo easy. No more traditional pizza for me as these have vitamins B6 and B12 which are energy vitamins, potassium & is a great source of protein with low calories.

I also make Portobella Burgers...

Just heard about this on another Spark thread last week. Sounded very interesting as I don't do well with "bread" - as it makes me want more once I get started. So i had just pretty much given up eating pizza.

But I love pizza and actually had a healthy homemade pizza sauce recipe. So when I heard about cauliflower pizza crust I did a search for the recipe. And it sounded like it could be good. So I gave it a try. And WOW! I loved it!!! I made the crust and my pizza sauce and topped with roasted red peppers that I roasted myself, black olives, and a few anchovies (yes, the salt addict in me loves anchovies - what can I say.....).

It was quite a bit of work and left many dirty dishes. But it was an adventure that resulted in a real treat for dinner. I may not make it every week (that lots of steps and many dirty dishes thing) but it will certainly stay in my recipe file for when I need a pizza fix.
