KATYKAT14, may I ask what you mean by "pushing the limit for carbs?" How many carbs are you getting in a given day?
It's hard to make suggestions with so little information. What are you eating the rest of the day? It sounds like your breakfast was working for you, so cutting healthy complex carbs there isn't the right choice for you. Carbs are good for you, especially whole grains like quinoa. What's your calorie range, and how many calories are you actually eating?

You could replace the quinoa with ground flaxseed or hemp hearts. Both are very high in protein and very low on carbs (ground flaxseed per 100g - 1.9g carb, 22g protein). Both are filling and tasty and can be mixed with just about anything. Beware though, that you should stir ground flaxseed into the food after you dish it up because, like flax oil, you shouldn't submit it to direct heat.
Can you cut carbs later in the day rather than at breakfast? I think it's more important to be satisfied at breakfast because for me, that cuts my cravings for the rest of the day, you know?

If you like quinoa and it adds a level of satisfaction to your breakfast, I say keep it.
You could cut it down... use half the amount you used to use, and make up the difference with sauteed veggies (I've quite often made a bed up sauteed veg - mushrooms onions peppers spinach tomatoes or whatever i have on hand, and laid my eggs atop, perhaps with a bit of grated cheese, perhaps over top of a half english muffin and then the whole thing topped with pico de gallo).
you could try replacing the quinoa with some veggies [broccoli, squash, cauliflower, zucchini, tomatoes]. or you could just reduce the amount of quinoa and add in veggies. but if what you are eating is satisfying you and you're on track, being on the high end for carbs isn't necessarily a bad thing. some people actually do better eating higher in carbs [i frequently get over 300 grams of them a day]. and is the quinoa really the junkiest carb you could cut in the day?

One of my breakfast staples is ground turkey, eggs. queso sauce, and salsa all mixed up. I used to put quinoa in as well, but I've noticed that I'm usually pushing the limit for carbs and I thought I should cut the quinoa out of my morning routine. Now however, my breakfast isn't as satisfying. I'm wondering if there are some other healthy ways to bulk up this meal without adding in a lot of calories.
