I love black currants and usually eat them raw. I recently realized a lot of people do not even know blackcurrants.
I tend to mix them with sweeter berries. White currants, raspberries or something and eat them raw.
Smoothie with black currants and those berries taste great too, blending them and adding apple (juice) is tasty too. - I blend in a high container using a hand held blender/mixer - you get those cheap if you do not have one
You could bake a crumble with them or a blackcurrant cake (mix whole fruits in plain or madeira cake dough or do a baked pastry case with blackcurrants on top and cake dough crumbs on top.
You can add them to pancakes
you can use stevia to sweeten them Eat them with milk or yoghurt (or cream) They are supposed to go good in salads /dressings (similar to raspberry vinaigrette) but I hate salad dressings and that is just hearsay.

Thanks for the thoughts, all! :) Maybe I will throw some on a salad or something. That's the only healthy thing I can think of that calls for berries. Usually berry recipes are desserts. Smoothies are a good idea but I don't have a blender or food processor.
1/2 cup applesauce 1/4 cup white sugar 1/4 cup brown sugar 1 teaspoon vanilla extract 2 eggs 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup skim milk 2 cups blackcurrants cinnamon/sugar
Preheat your oven to 450 degrees
Use paper liners to line your muffin tin
In a large bowl, mix together the applesauce and sugar.
Beat in eggs and vanilla.
Combine flour, baking powder and salt, and stir into egg mixture alternately with the milk.
Fold in blackcurrants.
Spoon batter into prepared muffin cups and sprinkle the muffin tops with cinnamon/sugar.
Bake in preheat oven for 5 minutes. Reduce heat to 375 degrees and bake for 30 minutes more, until golden.
You will love them !!!!
Makes 1 dozen muffins that freeze well. Place individual muffins in a sandwich bag.

They'll be in season soon, although I buy them frozen sometimes. I've been eating them in plain yogurt mixed with other fruit, but need more ideas for ways to eat blackcurrants. Mostly I just see jams and desserts online. I don't want to turn them into something sugary and unhealthy, but they are hard to eat alone since they are so tart. Ideas?
