I made this pasta dish last week that used pureed butternut squash as the sauce, it was delicious:

I do use zucchini and spaghetti squash. Good stuff!
I should make more soups they are easy to get in and packed with nutrients.
Thanks again!

You can shred zucchini and add it to lots of things like soups, spaghetti sauce; also substitute spaghetti squash for pasta. Add spinach to scrambled eggs and smoothies.

Thank you LOSMITH2468. I will try that. I have resisted so far, but need to get more in. I will check the sodium, there must be lower count choices out there.
I appreciate all the information and help!
Will also look for the cookbook, sounds great.

Have you tried vegetable juices like V-8 or the fruit veg mix "V8 Splash"? Or put some thru a blender and add your own fruits to taste? I started doing a "Smoothie" based diet, incorporating a cup of v8 splash, a couple of cups of mixed fruits, raw carrots, anything else I can throw in. I'm not big on eating either fruits or veges, but this way they all just taste rather like a cross between a milkshake and Hawaiian Punch. Also look for that cookbook by Jerry seinfeld's wife - she has recipes for puree'd veges added to everything from soup to muffins to lasagna. I don't have vita mix either, just a regular old hamilton beech 8 speed blender but it does the job. Once it is blended, you could run it thru a strainer or colander to reduce/remove some of the bulk.

Thank you DIDS70.
What do you put in besides spinach? I don't have a vita mix, so need something that breaks down easy. Any suggestions?
Thanks again!

smoothies. I put at least 4 servings of veggies in my smoothies. They are really filling too. I had friends that did the lapband and found smoothies were helpful.

I would appreciate any ideas on how to incorporate more vegetables into my diet.
I have the lap band, so volume is sometimes hard. Same goes for vegetables that are really stringy.
Thanks for your help!
