Crock Pot Shredded Beef. It is a recipe I found on I plan to make it this Thursday for dinner. It looks yummy and easy. Good luck.

I always used a timer, just a plain, no frills, ordinary timer you get at any drugstore or hardware store.

Set the timer, plug it in, plug in your crock pot, turn the crock pot on, and you're good to go.

I don't have any specific recipes to suggest, but one thing that has worked for me for longer cooking times is to start with completely FROZEN meat. I know some people will say you shouldn't do that ... but it has worked for me for years!

I cook frozen roasts, chicken breast (bone in) or a whole cut up chicken and they come out GREAT. Starting out with them frozen helps keep them from overcooking as the extra time goes on.

You may need to do a little 'prep' ahead of time while the meat is fresh and not frozen - such as removing the skin from the chicken or taking the roast from the packaging and removing the little absorbant 'pad' from beneath it ... and THEN freezing it. If you don't, you may not be able to do it when the meat is frozen.

I got a digital light timer for my crockpot. I put it in in the morning and set it so it will be ready about 30 minutes after I get home (so it turns on 2-3 hours from when I go to work) Or I set it so it start an hour after i leave and turn it off before I get home. It takes a while for the crockpot to cool down.

Healthy Crock Pot Beef Stew

1 lb. beef stew meat
1 tablespoon flour
1/8 teaspoon pepper
2 1/2 cups beef broth
2, 14 oz cans Italian seasoned diced tomatoes, undrained
3 cloves garlic, minced
1 onion, chopped

Toss beef stew meat with flour and pepper and place in a crock pot. Add remaining ingredients . Stir well. Cover and cook on low for 10-12 hours until beef is tender

Eat stew alone or cook some whole wheat pasta or rice !


Carolina Style BBQ Pork in the Crock Pot

2 onions quartered
3 tbsp brown sugar
1 tbsp paprika
2 tsp salt
1/2 tsp black pepper
5 lbs boneless pork butt or shoulder or loin
3/4 cup cider vinegar
4 tsp Worcestershire sauce
1/2 tsp dry mustard
1/4 tsp garlic salt

Place the onions down in the crock pot.

Mix the brown sugar, paprika, salt and pepper and rub over roast. place on top of onions.

Mix the rest of the ingredients together and stir it really good. Pour it over top of the roast and turn the crock pot on.

Low 10-12 hours

When done, shred the pork with 2 forks and eat on whole wheat rolls !

I work and am gone from home 10-12 hours per day... I would love to find HEALTHY crockpot recipes that can cook for that long and not taste like paste when dinner time comes around.

I have looked on-line, but most recipes call for cook times of 7 to 8 hours. Do any of you have a favorite EASY recipe that can withstand cooking that long? Any ideas would be greatly appreciated!
