Bake a tray full of veggies such as cut up potatoes, onions, carrots, beets. Grill a steak to go with this for the meat lover. Or, make an egg bake: wilt some spinach or chard and put on bottom of baking dis, add shredded mozzarella cheese, add cut up Italian sausage on one half of the dish then cover with beaten eggs. With a fork move the ingredients slightly around so that the egg soaks in. Put in 375 oven for 30 minutes.

The most inexpensive is a hearty vegetable stew, using whatever is available at the store or farmer's market. Thicken it with some mashed potato instead of flour. For the meat lover, sear some beef if you used root vegetables, chicken if you used more delicate vegetables. For the vegetarian lover, sear some tofu in garlic olive oil. Layer the stew in bowls with meat for the meat lover, tofu for the vegetarian, and serve with slices of fresh crusty bread. Condiments on the side if they like to play with their food. You can make a side salad and dessert for everyone to share.

Stew is easy if you buy the precut vegetables, less expensive if you do the chopping yourself.

I have a meat lover and a vegetarian coming for dinner on Sat. What do I cook? Neither would want me to go to a lot of trouble, but what is easy, inexpensive and would satisfy both?
I did a cheese & spinach lasagne with Italian meatballs on the side last year....any ideas?
