Love it!! I'm going to steal this and give it a try! I have been trying to use stronger flavored cheeses so I have to use less!

I usually make mine with fat free American cheese slices and 'I can't believe it's not butter' spray. I think the swiss cheese would be much better!

I love fresh spinach layered with the grated cheese on mine.. and lots of sliced tomato!

and some basil to go with the tomato slice MICNJ43 suggested.

an italian deli my me makes a grilled cheese with provolone, white cheddar, tomato and basil. I lighten it up at home with wonder smart white (100 calories for 2 slices) and light mozzarella.

I love grilled cheese sandwiches. Your ideas are wonderful. Here is how I make mine:

cut pita bread in half, put some thin slices of cabots, jalapeno reduced fat cheese in each pocket and put in microwave for one minute. I can make this at work for lunch.

At home I will put a whole wheat tortilla in a non stick frying pan, top it with shredded cheese of any kind (I love Swiss too) and put some hot sauce on the cheese. Then top it with another whole wheat tortilla and let flip it over when one side is a little browned. Cut it in wedges and it is often my supper or I make it for appetizers.

I love to roast a big batch of veggies (sweet onions, peppers, zucchini, mushrooms), shred some cheese, and let the kids make their own grilled cheese sandwiches. I use olive oil spray on the bread to make it crispy.

The veggies add great flavor. Fried eggs in the middle are also a big hit! I love grilled cheese...comfort food at it's best!

A little olive oil on the bread is a good substitute for butter/margarine
I like to add a little herb mustard on the inside of the bread with some low-fat mozzarella, or a light cheese wedge smeared on the bread. Sliced tomatoes are also a tasty addition.

Grilled cheese is just a beautiful thing. emoticon

I love grilled cheese! I use whole wheat, lower carb bread with reduced fat cheese slices of whatever type I have handy. I often add some lunch meat. I use cooking spray on mine to make sure the bread gets nice and crispy. Sometimes I add veggies or fruit, too. Ham, cheddar and sliced apples is a favorite. I also love adding mushrooms and peppers!

Good idea to change the cheese type and change the flavor. That way you can select a lower fat cheese to. I also put a little spice in mine. Even just a little parsley to see the green or a pinch of garlic powder occasionally.

Oh, I've never tried grilled cheese with Swiss! My mouth is watering just thinking about it!

A good (and delicious) way to add a bit more protein and nutritional oomph to a grilled cheese sandwich is to fry up an egg white (or a whole egg for super duper protein!) and put it in the sandwich before grilling it. Really, really yummy! emoticon

Today I transformed an old favorite into a much healthier alternative. Traditionally, grilled cheese is made with white bread, slathered in butter and stuffed with cheese slices. Instead, I used thin slices of a multi-grain bread and 1/4 cup of grated swiss cheese. By cooking it in a non-stick frying pan, I didn't have to add any butter at all. I don't know if it would win any health awards, but I figure it's way better than the traditional sandwich.
