one of my favorite desserts that isn't too sweet is cobbler.

- 2 bags of 12-16 oz frozen fruit
- box of white/yellow cake mix
- 1 can diet 7up or diet sprite

Put frozen fruit in the bottom of the cake pan. Pour dry cake mix over frozen fruit. Pour can over cake mix (don't mix). Bake in 325 degree oven for 40 - 45 minutes - enjoy :) The cake mix and 7up make the cobbler-like topping. Yum :)

One of our standard lunches now is to choose a quick-cooking grain/even pasta (couscous, orzo, quinoa etc.), add whatever veggies we feel like (sundried tomatoes, olives, and feta is a great combo!), and protein (chicken and/or canned beans- rinsed and drained). I always add a fresh herb and sometimes I'll add a little cheese.

I cook my grain in veggie or chicken stock for extra flavor and add some fresh lemon juice. Couscous cooks in five minutes- so it's really fast to prepare! You can add in raw veggies or sautee them before combining.

For couscous I use the near east brand and I get four servings out of a box with my add-ins! Quick, easy, and yummy! And you could add different things to the same batch to flavor it differently.

I will be going back to work in 2 weeks, and since I don't like to cook very much, I need some easy recipes to make for lunch. I also need some for dinner, maybe crock pot also, and I could take some leftovers for lunch.
