Salads don't have to be just veggies. Try adding berries (I use mixed berries from costco) frozen blueberries, blackberries and raspberries, cran raisins, glazed walnuts, mandarin oranges and strawberries to lettuce. Just add a bit of raspberry vingerette.. yum.

You can eat potatoes, just in moderation. You can eat what you would normally eat, as long as it's in your calorie allotment for the day. May small modifications, use lower cal toppings for a baked potato or skim milk, low fat margarine/butter substitute, etc. for mashed. Try mashing cauliflower instead of potatoes. Use the leanest cuts of meat for your protein. Cut sweets to the occaisional treat. Fruits and veggies aren't the only healthy foods out there. Experiment. Add veggies to pasta sauce or a salad or on a thin crust/whole wheat crust pizza. Try new ways of cooking them. I find roasting brings out some really lovely flavors. You can do this.

You need to branch out a bit and try some other veggies, and who knows? You may like them. Turnips taste almost exactly the same as potatoes and throw some in for some variety, and sweet potatoes are good too.

You can learn to like healthy food! It might seem overwhelming at first, but if you keep at it with small changes, you will eventually discover that there are healthy foods you actually like. I would say start with what you DO like, and try to make it healthier, with less fat or salt.
As for salad and vegetables - you might just have to bite the bullet and decide to eat them even if you don't like them. There's a few ways of doing this. For salad, find a salad dressing you like. A lot of people don't really like salad - they like the dressing! So find a light ranch dressing that you like. A couple tablespoons will go a long way.
Also, try cooked vs. uncooked, fresh, frozen and canned, before you give up on a vegetable. Try different methods of cooking too. For years I thought I hated vegetables. As it turns out, what I mostly don't like is cooked and canned vegetables (although there are some vegetables that I would rather have cooked than not). My guy is the opposite, he likes cooked and canned veggies and views fresh vegetables and salad skeptically. He eats it because it's good for him, but mostly he likes the dressing.
Also, see if you can learn to like beans or lentils - red beans, pinto beans, black beans, white beans. They are very nutritious and have both protein and fiber - great nutritional bang for your buck.
It is easy to get overwhelmed, but you have already made a HUGE change for the better in giving up Mtn Dew. Go you!

That is alot to say you don`t like fruits and vegetables....there are hundreds! and very few are similar in taste.....try adding some seasoning, etc.... Also you can eat a lot of other foods, why does everyone think fruit & veggies when the words "healthy eating" stated?
Eat the fruits you do like, that is a start. Do you like ANY vegetables besides potatoes? Be brave and try one, you might like it. Giving up soda is huge ! Congrats on that too.
Do you like eggs? Hard boiled eggs are great for breakfast and omelets are good for lunch.
You need to make a list of what you do like to eat and make a menu around them.
But at least try to eat something new. I never thought I'd like kiwi fruit, I now LOVE them !!

You can HAVE potatoes. If you deny yourself what you like, then you won't succeed long term. Instead, try making a deal with yourself...one serving of roasted crispy potatoes for one serving of roasted broccoli with parmesan cheese or one serving of roasted apples dusted with cinnamon. For the potatoes, slice one small potate into "home fry" style and size, put on a cookie sheet and bake at a 425-450 degree oven until crispy. Sprinkle with salt while still hot.
At the same time either cut an apple (keep the peel, but cut out the seeds) into 1/8ths, spread on foil on a cookie sheet and sprinkle with cinammon or (hey, try both!) sprinkle a serving of broccoli florets with a little oil, a light sprinkle of garlic salt, and 2 T parmesan cheese (add smashed garlic if you like that flavor too). Roast those in the oven at the same temperature for 7-9 minutes, or until your potatoes are done.
IM NEED HELP IM NEW TO THIS WANTING TO DIETING. I HAVE MANGE TO GIVE UP MY MTN DEW DRINKING(I USE TO HAVE PROB 4-7 CANS A DAY) AND NOW I DRINK ABOUT 5-6 16.9 OZ OF H2O ADAY ITS BEEN 2 WEEKS SINCE FOR THIS SUCCESS. I DONT LIKE VEG OR SALADS AND ONLY LIKE A FEW FRUITS. SO HOW CAN IEAT HEALTHY IF I DONT LIKE HEALTHY FOOD? I WOULD LIKE TO TRY THE MOCK POTATOES BUT THERE IS SO MANY RECIPESI JUST WANT ONE THAT TASTE AS CLOSE TO POTATOES AS POSSIBLE SO ANY HELP WOULD GREATLY BE APPRECIATED! THANKS
