I use frozen corn instead of fresh charred (although the flavor is better with fresh charred); whatever peppers I have on hand (usually jalapeno or serrano); and beans instead of chicken since I'm vegetarian.
I've made these for guests, and done them on the barbecue, and they're a huge hit.
I am finding the Spark recipes to be very tasty and easy -- a good combo! I am still fairly new to the site and wondered what recipes were everyone's favorites. We've only tried about five so far, but the phyllo-wrapped asparagus and Mexican crock pot chicken were big hits at my house!
